Best of Everything Veggie Burgers

We really enjoyed these but I, too, wound up having to add a LOT more breadcrumbs than the recipe called for and don't know why as I followed all directions exactly as written. Other than that, no issues and we loved them (although the kids weren't quite as crazy about them)! Also, I'd recommend cooking the rice according to package directions as I walked away from mine after setting the timer for the amount of time listed and wound up having to make new rice....lol. We'll definitely be making these again!

Homemade Crispy Seasoned French Fries

I actually made this recipe with organic sweet potatoes. We had veggie burgers and sweet potato fries and these stole the show. I did fry them because I was already changing the recipe up a bit and didn't want it to turn out to be a disaster but you can bet that next time, we'll be baking these! They were delicious - I used 4 potatoes and it fed all seven of us (2 adults and our five children) with some left over! One thing I would recommend is drying the potatoes VERY well if you are going to leave them soaking in water. I gave ours a quick pat before putting them in the batter but by the end of the potatoes, my batter was a LOT runnier than it was at the beginning. So just make sure you get ALL excess water off to avoid the same issue! Thanks for a great recipe!

White Cheese Chicken Lasagna

I am making this recipe for a second time tonight after we loved it the first time. The only real changes I made were instead of baking or boiling the chicken, etc. I pan seared mine with some complimentary seasonings since so many people had stated that the chicken was a little bland. We were DELIGHTED with the end result and am making it for company tonight along with some homemade french bread, caesar salad for dessert, and homemade cannolis!!!! Thanks for sharing!

Jay's Signature Pizza Crust

This was a pretty good baisc crust and really easy to make. I did pre-cook the crust for about 5 or 6 minutes and then cooked the pizza about 14 minutes (but of course ovens vary) and it turned out well. I have 6 children and cook for 8 every night and still had to double this to make enough but 1 1/2 times the amount would have been about perfect to feed a large family like mine. Thanks!

Creamy Split Pea Soup

My family really liked this soup but I did have to make a few changes while cooking because following the recipe made mine come out a little bland (although I did omit the bacon and substituted milk for cream to make it a LITTLE more heart healthy). I used low-sodium chicekn stock for some of the water and added a bit more salt than it called for but was happy with the result.

Bread Bowls

These came out pretty well - they didn't hold their shape on the pan as well as I hoped but they did hold the soup PERFECTLY and were tasty. I had to cook almost 30 minutes and my oven usually doesn't vary AT ALL from posted cooking times. Bonus, I actually only did 4 bread bowls and rolled the rest of the dough out on a cutting board, jelly-rolled it, pinched at the seams and baked in a loaf pan for a fresh loaf of bread - cooked it at the same time as the bread bowls :-)
