About this Cook
I just love to cook. There are several areas of interest which are not catalogued here, such as confections etc. I love working with chocolate and have been asked to sell my fudge LOL :) Maybe someday when I can retire I will go to cooking school just for fun.
My favorite things to cook
Too many things to mention but I do enjoy making brown sugar meat loaf, white chili and am becoming more ambitious about baking (breads etc)
My favorite family cooking traditions
My mother wasn't a great cook but there are some dishes, like swiss steak which she made that were outstanding. My grandmother, who cooked on a wood stove, was the best cook I ever knew...even now I am impressed with her.
My cooking triumphs
I made some passable cream puffs one time, and I made chili rellenos which would rival any cook's out there.
My cooking tragedies
I tried my hand at curry long ago but didn't understand until I failed that a little goes a long way LOL.

Alaska Salmon Bake with Pecan Crunch Coating
I had something similar to this in New Orleans restaurant, (Olde Nawlins Cookery) and it was absolutely incredible!!!!! I recommend to Caroline C. that she try a remoulade sauce instead of dijon. It may be just the flavor she is looking for, slightly sweet, with a nice bite behind it.

Chocolate Pecan Pie III
This pie was absolutely scrumptious! Fudgy as described, and believe it or not, not too sweet! I used a graham cracker crust which, along with the pecans; gave a crunch texture that complimented the smooth filling perfectly. Yayyyy!!! and thanks to submitter, a holiday tradition for my family from now on! (NOTE: I agree with the reviewer who suggested cooling filling down before adding eggs!!)

Easy Microwave Maple Fudge
I haven't made this fudge yet but am tomorrow. I do have one important question. I will find out the hard way anyway lol but I intend to use mapleine (maple flavoring) which may be stronger than an extract. I will let you know how it turns out. Let me know if this is not a good idea in next 15 hours. thanks :)
