About this Cook
My favorite things to cook
NEW DINNER RECIPES--I get so tired of fixing the same staple meals over & over, so I'm always looking for something new to try! I especially love casseroles (just because they're usually so darn good!) & slowcooker meals (so convenient!).
My favorite family cooking traditions
Helping my grandparents prepare Thanksgiving dinner--we start on the Wednesday evening before making homemade stuffing (a recipe passed down through my PawPaw's family), cutting up a little bit of almost every fruit in the produce section for PawPaw's famous fruit salad, stuffing the turkey. etc. I also love baking cookies with my mom & making homemade candy for Christmas with my mom & MeeMee.
My cooking triumphs
I have a few recipes that my husband really raves about to other people, which makes me feel really good. I also have relatives beg me to make tiramisu, so I guess I've gotten pretty good at it--I just don't make it very often because it's pretty involved. I also make a mean broccoli casserole, taco dip, & homemade mac & cheese :)
My cooking tragedies
Thankfully I don't have very many, but the few that stick out include an undercooked Christmas ham, a defective Butterball turkey (yes, it was really defective & we got our money back from Butterball!)the top layer of a double-layer cake splitting in 3 pieces on its own, an incident with potatoes & a pressure cooker (I haven't used a pressure cooker since, & that was 6 1/2 yrs ago!), & of course the standard burnt biscuits/cupcakes/cookies/garlic bread, etc. that every cook goes through throughout their entire existence!

Mexican Pizza
Made this for dinner last night for my mom, husband, & myself; we all loved it, but the consensus was the same--it needs a layer of salsa, both for moistness & flavor. Will be making again in the near future, & will be adding a layer of salsa, probably over the cream cheese/sour cream mixture....will also probably add some taco seasoning to the cream mixture for more flavor.

Left Over Spaghetti Lasagna
DELICIOUS!!! A bit involved if you make it "from scratch" (fresh spaghetti in the event that you don't have any leftover), but well worth it!

Chicken Baseballs
Tried this recipe for dinner last night--my husband, my mom, & I all 3 LOVEd them! Absolutely delicious & super-easy to make; the hardest part of the whole recipe is folding up the edges of the crescent dough & trying to get the chicken filling to stay inside, but I may have overfilled slightly! Will DEFINITELY be making these again soon!
