German Potato Salad

So good! I go a little over on the vinegar and bacon grease....I just think they work very well together, and more is better in this case. I use rice wine vinegar, which is sweet, and as a result don't use much sugar. If you're new to this dish, this recipe is very, very tasty as written and you will be safe. My changes are from decades of various tastings. This recipe is beautiful as written. Thanks so much!

Yummy Yam Casserole

I have never, ever in my three decades on Earth liked sweet potatoes or yams, nor did four of my dinner mates. My husband adores candied yams with marshmallows. This recipe worked for us all. I used sweet potatoes (wrapped in foil and baked at 350 for 1-1/2 hours) and added marshmallows to half of the casserole (over the pecans), but otherwise did everything else as written. It was wonderful! The flavor was full and well rounded. The spices and butter melded perfectly and brought out the best part of the sweet potato flavor. I am saving this and will make it throughout the year. Thank you so much for sharing!

Caramel Pecan Pie

First time I followed directions to the "T". Pie was super sweet, tasted total caramel, and when the first slice came out the remaining pie gooed to the middle (it sat for at least 3 hours before we ate ). Second time I used 28 caramels, 1/2 cup sugar, and 1/2 tsp salt. Pie held its shape and the sweetness was just enough, just borderline. I might go down to 26 caramels next time. I was looking for a flavor of caramel, not such an absolute. This is a good recipe as a base. It does lend itself to adjustment for taste. I'm glad I found it, thanks!

Chocolate-Mint Sandwich Cookies

Turned out great! I added lots of extra peppermint, but the cookies and yield were spot on. I didn't put in the fridge overnight (didn't think too far ahead), so instead put the rolls in the freezer until firm, about 20 minutes, and then into the fridge for a few hours. Thanks for the recipe. These were a childhood favorite.
