Sweet Potato Bread

I don't care for sweet potatoes, but I got a large can of them at Thanksgiving and didn't want it to go to waste. I decided to try this, and figured if I hated it I could take it to work and maybe my coworkers would like it. Hah! It never stood a chance! These are delicious and I had to stop myself from eating them all at once. The sweet potato flavor wasn't very strong which helped. The orange zest goes well with the sweet potatoes. My loaf pans are currently in storage, so I used large muffin pans, which took about 20 minutes to bake. I still have sweet potatoes leftover (I threw the leftovers in the freezer), which is awesome because I have every intention of making more of these! Even if you hate sweet potatoes, give this recipe a try!

Naan

I have made this twice now and I love it. I add garlic powder to the dough in addition to the minced garlic and garlic salt to the butter (I like a lot of garlic). I grill them on a flat cast iron pan & they get all these wonderful bubbles that brown. The house smells amazing & I usually eat two or three while they are cooking (quality assurance!). I cut my dough into 16 servings, as I like my slices to be bigger. Wonderful!

Smooth and Creamy Peanut Butter Pie

I used 8 oz cream cheese as recommended by other users. The cream cheese flavor is prominent, so keep that in mind if you choose to use 8 oz. I added sugar to taste; I used about 3/4 cup. I whipped my own cream (I don't care for Cool Whip). I whipped extra and used that to top the pie. I crushed peanut butter cups for the bottom of the pie and chopped more for the top. I threw it in the freezer for a quick set. It was pretty darn good. Using fresh home made whipped cream really put it over the top. I'll make this again, but plan on tweaking it to make it even better.

Banana Muffins with a Crunch

I made a few modifications due to lack of ingredients but they came out delicious! I didn't have butter, so I used 1/2 cup of canola oil; the muffins came out slightly dry but that is my own doing (I should have used 1 cup or added apple sauce to make up the difference). I added 2 tsp cinnamon, 1 tsp ground ginger, 1 tsp nutmeg, and 1/2 tsp cloves. I didn't have coconut, granola or banana chips, but I did add 1/2 cup raisins and 1 cup oats. Next time I think I will substitute apple sauce for all the butter and hopefully it will turn out more moist.

Spinach Lasagna Rolls

I doubled the recipe and added onions, peppers, carrots, and used fresh spinach (I don't like the texture and flavor of frozen spinach). I also added Italian seasoning as well as salt and pepper. If I make this again and am feeling particularly sinful I will omit the veggies. I think just cheese on its own would be best in this recipe.

Barley, Lentil and Mushroom Soup

This is delicious! For those of you wary about dishes without meat not being good, try this! It's hearty and filling. If you really can't live without the meat you could add stew meat. I didn't have porcini mushrooms or sherry, but I don't think I missed out on much. I didn't have beef broth but I did have beef bouillon. I also added two bay leaves as I rather like bay leaves. I want to preserve this soup so I always have some handy.

Spiced Banana Cake

I didn't like the texture of this cake. It wasn't fluffy like cake. It was rather dense. I didn't care for the oats in a cake but if this were a bread it would be fine. I used the amount of spices called for and still found the cake bland. I topped it with Cream Cheese Frosting II found on this website, and with sliced fresh strawberries on top it was good when not considering the heaviness of the cake. I won't make this cake again.

Chewy Granola Bars

I love these! I will never buy granola bars again! I use 1 stick butter and up the honey to about 3/4 cup. I like to use 1 cup dried berries, 3/4 cup roasted sunflower seeds, and 1/4 cup flax seed. I use a rolling pin to pack the mixture down to ensure the bars are...well...bars! Note: Do not use wheat germ in place of flour - flour is a binding agent and helps to prevent the bars from getting burned.

Oven Fried Chicken III

This is delicious! At first I was skeptical about the mayonnaise but I couldn't even taste it! For the users who complain it got too clumpy, I didn't have this issue, but I also got nice and messy (which definitely catered to my inner child lol) and grabbed a glob of mayonnaise and spread it all over the chicken. You gotta get dirty with this one (come on, indulge your inner child)! I used all chicken breasts as that's what I had and prefer. I loved dipping the finished product in hot sauce...I'm salivating now thinking about another piece dipped in hot sauce! :)

Cheddar Spirals

This recipe has a lot of potential to be amazing. I used four cups of mild cheddar and it didn't have the stringiness I was hoping for/craving, so next time I may add more cheese. I also want to try using Velveeta in place of the condensed soup. As is it is a great recipe and I would gladly make it again, but I'm going to tweak it to better suit my tastes. :) Update: I made this the next weekend after initially trying it, except I substituted Velveeta for the condensed soup. It came out a little too thick for my taste. Will keep trying!

Mexican Salad

This salad was great! I made it the night before hoping it would taste better the next day, but I don't think that would make much of a difference - I would just chill it long enough for it to get cold. I love all the different colors in it. So simple!

Mexican Rice II

I made this recipe as specified except I sauteed the onions before adding the rice. I added homemade taco seasoning as another user suggested. It came out alright, it was good as a side dish, but couldn't stand on its own. Perhaps I'd make it again.

Ash-e-jow (Iranian/Persian Barley Soup)

In an attempt to introduce more grains into my diet, I decided to try cooking with barley. This soup looked interesting and I am curious about Middle Eastern food, so I gave it a shot. I used yogurt instead of sour cream (it was what I had plus I'm trying to cut calories), and I added about a cup of parsley (I didn't have another dish to use it in and didn't want it to go to waste). The flavors are...different - I can't explain it any other way. Although there's a different mix of flavors, it still felt like it was lacking something. I found another recipe for Ash-e-jow, and that one seems more full bodied - it has barley, of course, as well as various beans, lentils, and rice. I think next time I will try that recipe because this one, while good for a such a simple soup, was just lacking. This would be great served with some homemade bread though!

Herbed Twice-Baked Potatoes

After hearing the neighbor kids yelling "potato potato" for some unknown reason, I decided it was a sign and made these. It was spur of the moment so I had to do a few substitutions - I didn't have chives so I replaced that with salt free herb & garlic seasoning. I also didn't have milk so I used powdered milk. I didn't feel like waiting for the potatoes to bake so I popped them in the microwave for the first round of baking. I used extra cream cheese as other users suggested, plus I like cream cheese. I sprinkled them with bacon bits after baking. Pretty good! I don't think they're spectacular but they are pretty good. I'll make them again, maybe do a few tweaks.

Sweet Pea and Noodle Salad

I picked this recipe because it incorporated what I had on hand and seemed like it would be pretty quick and easy to make. I added 1/2 a pound of bacon per another user's suggestion, and used a lot less onion as my onion was very strong and I didn't want it to overpower. I also added some red pepper flakes, some cajun spices, and salt and pepper. Turned out great, especially for being a last minute recipe and using what I had on hand. I'll make it again! :)

Home Made Farmer's Cheese

I halved this recipe since it was my first time making it. I put the milk in the pan straight from the fridge and so it took a long time to heat up and it scorched - I'll let it reach room temperature first next time. I added the juice of half a lemon and nothing happened. So I added the other half and voila! The curds seperated from the whey so quickly I didn't need to wait 10 minutes! The cheese came out beautifully! However, it is rather bland, with only the slightest taste of lemon. Next time I will add herbs and spices (I'm thinking sun dried tomatoes and basil or hot peppers would be wonderful). I used the cheese to attempt a grilled cheese sandwich. Unfortunately, the cheese didn't melt well at all and I was rather disappointed. I'll try using it in other recipes to see how versatile it is.

Indian Tandoori Chicken

I marinated this for about 20 hours. The color is beautiful if you use the food coloring. I was rather disappointed with the flavor though! I thought with all the spices and letting it sit for so long it would have a lot more flavor. I served this with cholay and Basmati rice. I doubt I'll make it again.
