Thai Stuffed Tofu

This turned out so yummy! I stuck to the directions but should have chopped my stuffing ingredients a little finer. I would also double the tofu amount but keep the stuffing the same because I had plenty of stuffing left over. Overall, a great recipe and one I think you could easily introduce non-tofu lovers to with positive feedback. This is a keeper!!!!

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

We loved it! I didn't have parsley, but I had a shallot and spinach so I used that as my stuffing. It was easier than I thought it would be. I recommend pounding the chicken, because it makes wrapping easier. I love the gorgonzola!

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

Awesome chicken! I pounded (tenderized) the butterflied chicken breasts, but other than that, followed the recipe. (rare for me) Served with little purple and red finger potatoes and a salad. The leftovers were amazing! Don't skip the made ahead stuffing; the longer those flavors blend, the better.

Turkey and Quinoa Meatloaf

My favorite meat loaf so far! TRY THIS!!!!! Quinoa is a power food, packed with protein and has a nutty taste. I love recipes that include my favorite grain!

I love these! Say goodbye to store bought bars! You can make these with so many variations. Use a variety of dried fruits, nuts and even chocolate chips and coconut flakes. I used Briar Rabbits's Molasses Honey for another tweek. Yum!

Perfect Turkey

This recipe is not for the low sodium dieters....but it does make one juicy turkey. Rinse the turkey really really well or it will be too salty for even the average person.

West Coast Cod and Shrimp

YUM!!!! I didn't have cream, so I threw in a can of cream o mushroom soup, left out the salt and cornstarch. This is my kind of comfort food! Everyone loved it!

Cream-Braised Brussels Sprouts

This is an old family recipe with 2 slight variations. We shread the sprouts first, thick slices, and we add a bit of nutmeg. The nutmeg and the cream are perfect compliments. Don't over cook, but try to get a brown crust going on. We have converted almost every brussel sprout hater into a lover with this recipe. (6 year olds don't count.)

Basil Pan-Seared Scallops over Pasta

The recipe is 5 star! However, next time I will use the bigger and less fishy sea scallops. (I used frozen bay scallops ) :( This basic recipe could be used for any kind of fish, shellfish, or even chicken. The fresh basil is a must!

Tasty Sesame Tilapia

This was so so so EASY! I liked it but it did lack something spice wise. I think next time I would add some thinly sliced red pepper and maybe some Thai pepper sauce to balance the sweetness. Good basic recipe though!
