Old Fashioned Coconut Cream Pie

Definetly a good pie. I followed the other suggestions of using only part of the half and half and the rest a can of coconut milk. Then I used coconut extract instead of vanilla. I didn't think that it was too much of a coconut taste. The only other thing was that I couldn't get it to boil. I did it on low heat. The misture got REALLY thick. I tried to boil it but was afraid of burning it. It still turned out great and firm. I'm adding it to my recipe box!

Chocolate Chocolate Chip Cookies I

These were ok. Not as soft and chewy as I like. I also didn't have baking soda so I used powder and used white chocolate chips. I'll have to keep messing with it.

Ultimate Potato Soup

This soup was easy to make and tasted very good. It made a lot for my small family of 3, so I froze some. I used all reduced sodium products and it could have used some kick. I think I'll put some bacon in it when I heat it up next time.

Florentine Artichoke Dip

I really liked this dip. I definetly altered though and would recommend it. I used 1 brick of cream cheese. I also only used 1/4 c. of mayo and used 1/4 c. of sour cream. I wanted my dip extra spreadable and added about 1/4 c. of milk. It came out perfect. I then sliced a french bread baguette loaf and brushed it with olive oil and sprinkled with garlic then baked them 10 min too. I spread the dip on the bread and it was a hit. I will definetly make this again.!

Chicken Florentine Casserole

My husband loved this! I used milk instead of the cream since I didn't have any. Also, I used canned spinach...which I don't really like the taste of but it was all I had on hand. It was still good despite that, I think it would be amazing with fresh or frozen spinach. Very good and easy!

Butterscotch Bread Pudding

Very good and easy to make! I had the ingrediants on hand. I should have cooked it a little longer though! I wish I had a cream souce or some sort of caramel to go on top of it.

Red Skinned Potato Salad

This is the first potato salad I ever made and it was sooooo good! I used green onion instead of regular. It looks prettier and its all I had on hand. I also added just a little bit of mustard. Absolutely amazing. It was even better the next day after I let it sit overnight, the bacon adds some great flavoring!

Chocolate Mousse

This was excellent! I absolutely loved it. I used this as a cake filling but could easily be served as dessert alone with some cool whip and shaved chocolate. The only thing I did wrong was I didn't beat the cream long enough and it was a little running. It still tasted AMAZING!!!

These were excellent! I made them just how the recipe called for and wouldn't change a thing! I did beat the eggs until soft peaks were forming...and then mixed it in. I love them!
