Caramel Macchiato Ice Cream

I got an ice cream machine a couple of weeks ago and tried this based on the reviews. Um, it's sooooo good!!! My husband doesn't like caramel so we didn't add that (but I have some and am going to add it to the next batch). This is definitely going to be a staple (in fact, I bought a big container of instant coffee just so I can make this whenever I want).

Sopapilla Cheesecake Dessert

Sooooo delicious!!! I followed the recipe exactly and it was amazing. Easy too! I can see how you can play around with this recipe, top with fresh berries, substitute pecans, play around with the cheesecake center, etc.

Macadamia Nut Chocolate Chip Cookies

My husband said these are "crazy good". So I'll give the recipe 5 stars. I used white chocolate chips and walnuts instead, and baked for about 8-9 minutes and they came out perfect. Yum!

Chocolate Chocolate Chip Cookies I

These cookies are unbelievably good! I didn't add walnuts, because I was too lazy, but I bet they'd be amazing with them. I also want to try it with peanut butter chips. They took a few extra minutes to bake than the recommended 8-10 minutes, and they came out perfect. I like my cookies soft and chewy, and even with the extra couple of minutes they were still perfect with no crisping.

Too Much Chocolate Cake

To quote my husband, this cake was "phenomenal". I'm not a huge cake fan, but this recipe is amazing. I followed it exactly (I did use mini chips), and it required about an extra 10 minutes in the oven. I will definitely be making this again! Soon!

Carrot Cake III

This was my first attempt at a carrot cake and it was so delicious! The cake was fluffy and moist. I did shred about a 1/2 cup too many carrots and added it anyway, and did add a bit more vanilla and cinnamon (I don't know if it made a significant difference). The icing was yummy, too! My only problem was that the cake didn't set well in the middle, so I wasn't able to take it out of the glass pan as it stuck even though I greased and floured it plenty (maybe if I'd used metal?). I had to bake it for about 10 extra minutes since it was still wobbly in the center. I didn't take it out of the pan and just cooled and frosted it in there. I will definitely make it again!

Catherine's Spicy Chicken Soup

I made this the other night with leftover Thanksgiving turkey. It was delicious! I made it on Saturday, then put it in my slow cooker on Sunday for a few hours. We had about 10 adults over after church and there was even some leftover. I omitted the whole peeled tomatoes and instead of fresh garlic I used the minced kind in the fridge. I put the shredded cheese and sour cream on the side. You can't go wrong with this recipe! Oh, and it's not too spicy especially for someone as sensitive as me. I plan to make some more and freeze it in small batches to eat over the next couple of months. Definitely a keeper.
