Sam's Famous Carrot Cake
Oh my, this is just delicious! I served it to family and coworkers and they just could not get enough of it. The ingredients set it apart in a subtle way--I had to field the repeated question of "What did you do differently?". While a good cream cheese frosting is a nice and traditional addition (and one that I did use), I think the cake would be great on its own.

Blackberry Cobbler II
This is truly amazing cobbler. After serving it at a family gathering, it's the number one dish that everyone, without fail, requests I make for dinners and gatherings. I use a deep round cake pan because I don't have a cast-iron skillet, and sometimes make more crumb mixture if I'm serving someone who likes a bready cobbler. It's likely to bubble over, so do place a layer of foil beneath the pan. If cooked successfully and in keeping with the recipe, this is a no-fail dessert (or, as I've found, breakfast--try it with coffee or hot tea!).

Mock Tuna Salad
While the taste does vaguely resemble tuna salad, it's certainly not a "mock" tuna salad. It is it's own entity, and a delicious one at that. I did not have onions on hand and had to omit them, but everything else was followed to a T. I'm sure it would be even better with the green onions incorporated. It's absolutely fantastic with bread, particularly hot homemade or bakery bread, but even the bagged loaf from the corner store is fine. This salad is also great on its own, eaten right from the bowl. You can't really go wrong here. Yum!
