Gigantes (Greek Lima Beans)

WOW... This was such a great and tasty recipe... much better than expected... I love dill and that's why I made it plus I'm a vegetarian, so this was perfect for me. The flavor was REALLY good. Even my husband who doesn't like beans that much loved this recipe!!! The only changes I made were the following: * I cooked the beans for about 35 minutes instead of 20. * I used 1/4 cup of olive oil instead of 1 cup * I used 1 28-Ounce can of Muir Glen Organic Fire Roasted Crushed Tomato, and 4 garlic cloves instead of 2 (because I love garlic) THIS was sooooooooo YUMMY!!!!! I will be making this very often, even for parties!!! Thanks for posting!!

Fluffy French Toast

This recipe turned out GREAT! I made it today (valentine's day)for my husband and he and I loved it!!! I used Challah bread and PAM butter flavor instead of the oil. I got 6 pieces instead of 12. Maybe because the challah bread is bigger than regular sandwich bread. I will be making this recipe again and again!!! Thanks for posting it :o)

Chickpea Curry

This recipe was ok, I give it 3.5 stars as is (with no modifications). I will make it again though. Next time I will use fresh ginger instead of the powder ginger... I think this is key.... something was missing though, I don't know what it was... the chickpeas were way too dry and I had to add water.... also the cayenne pepper is REALLY HOT and SPICY!, next time I'll add way less than what the recipe calls for... My chickpeas were soooo hot that I added some coconut milk to make it more mild... I also added some sugar, perhaps 2 tablespoons... At the end of the day my recipe was totally different than what I intended to do. It turned out pretty good though!

Maria's Broccoli Rabe

This recipe was great!! I love broccoli rabe and this recipe definitely satisfied my cravings :) Couple of things though. Next time I will boil it for 3-4 minutes instead of 5 as it was on the soft side... I used less oil than the recipe called for, about 1-2 tablespoons and this was enough. I think if I would I used 5 tablespoons, it would have been too oily. Overall fantastic recipe!

Tofu Parmigiana

I made this recipe last night and my husband (non-vegeterian) and I (vegetarian) loved it!!!!!! I modified a little and followed some suggestions mentioned in other reviews: 1. I sliced, froze and thawed the tofu first 2. I seasoned the tofu with powder garlic, onion, salt, and black pepper 3. I used the flour, egg, bread crumbs combination for breading the tofu and I added dry oregano & basil to the bread crumbs. 4. I baked the tofu instead of frying. I used Prego traditional sauce, low fat mozzarella cheese, and parmigiano reggiano cheese. This turned out perfect!!!! I will be making this recipe again, and again! Thanks for sharing this recipe!!!!
