Banana Pumpkin Bread

Agree w/ those who say double the spices. If you don't have pumpkin pie spice (I don't), mix your own with 4 parts cinnamon, one part each of ginger, allspice and ground cloves, and 1/2 part nutmeg.

Chicken Pot Pie II

So very yummy. Like others, I used half and half instead of milk, and fresh veggies on-hand (potatoes, carrots, broccoli) and frozen peas and frozen corn. Baked in oval casserole, used frozen pie crust for top. Did not add salt, but added Penzies chicken soup base to the liquid. OMG. Indescribably good.

Pesto Chicken Penne Casserole

Made substitutes with what was on hand: diced tomatoes instead of crushed; mozzarella and cheddar instead of Italian cheese blend; no pesto available. Great recipe that welcomes adaptations. Makes more than enough for one 9x13 pan for sure.

Big Soft Ginger Cookies

Double this recipe or you will be sad. Increase the spices by at least 50%, and substitute OJ for water. Add a little extra flour after mixing to make the dough more workable.

Slow-Cooker Posole

Tasty and filling. I didn't have enchilada sauce, so used an envelope of enchilada sauce mix with tomato sauce, tomato paste, and water instead. Used smaller amount of green chilies also because we are heat wimps. Substituted cumin for cayenne because I like the flavor better. Did not use cilantro because cilantro=yuck. Served with lovely ripe avocado, and wow, it was so yummy.

Broccoli Chicken Divan

Great basic recipe. Double it, and use cream of chicken and cream of mushroom soups. Add sauteed mushrooms. Mix in sour cream with the soup and milk; add extra cheese to this mixture, too. Increase buttered bread crumbs to half a cup.

Baked Potato Soup

Double it! I used a little more flour than recipe called for (7 T for doubled recipe, instead of 6T), and half the hot sauce. Still had a kick, but was hearty and tasty.

Cheddar Buttermilk Biscuits

Fabulous recipe. So easy if you use a stand mixer to mix--but not overmix--the ingredients. Save time by dropping dough into muffin pan sprayed with Pam. Super quick, super delish.
