Banana Pumpkin Bread
Agree w/ those who say double the spices. If you don't have pumpkin pie spice (I don't), mix your own with 4 parts cinnamon, one part each of ginger, allspice and ground cloves, and 1/2 part nutmeg.

Chicken Pot Pie II
So very yummy. Like others, I used half and half instead of milk, and fresh veggies on-hand (potatoes, carrots, broccoli) and frozen peas and frozen corn. Baked in oval casserole, used frozen pie crust for top. Did not add salt, but added Penzies chicken soup base to the liquid. OMG. Indescribably good.

Pesto Chicken Penne Casserole
Made substitutes with what was on hand: diced tomatoes instead of crushed; mozzarella and cheddar instead of Italian cheese blend; no pesto available. Great recipe that welcomes adaptations. Makes more than enough for one 9x13 pan for sure.
