Thai Chicken Curry with Pineapple
Oh my goodness!!! My husband says this is better than our Thai restaurant's curry chicken and the best dish I've ever made. Will be making this again and again. I didn't add the pineapple as I don't like warm fruit, but followed the recipe exactly and even doubled it. So glad I did because it was even better the next day. I will definitely be making this for company. It was time intensive for the prep, so it will be great to make the day before and then heat up and make fresh rice the next day for guests.

Grandma's Green Bean Casserole
LOVED, LOVED, LOVED this recipe! I made it for the first time for Thanksgiving. It was so fast and simple to put together and baked up perfectly. I doubled the recipe to cook for 15 people and everyone loved it. I took some advice from previous reviews and sauteed the onions in butter first and removed them from the pan. I added 3 Tbsp flour (remember, I doubled the recipe) and then 1.5 cups sour cream. I used 6 cans french style green beans and mixed in 2 cups Colby-Jack cheese (I think it melts better than Cheddar) as well as some crushed up fried onions and a few shakes of pepper. I then topped it all with 2 more cups of cheese and the cracker mix - and more crushed up fried onions. This recipe is going in my favorites! Would be great for a potluck too!
