Yellow Squash Casserole

This is a calorie-laden recipe, heavy like quiche. I am calorie-conscious, and prefer squash/onion/salt/pepper cooked in a pot with a little water. Drain the liquid, and add a small amount of butter. Yum!

Roast Leg of Lamb with Rosemary

I followed the recipe, exactly. Honey does not taste right in lamb gravy. There is too much rosemary. The high heat makes the roast cook fast and tough. Next time, I'll cook the de-boned leg of lamb in a crock pot, using salt, pepper, garlic salt, a twig of rosemary. Then, the meat will be tender and seasoned correctly.

Extreme Banana Nut Bread 'EBNB'

I followed the directions, ans was very pleased with the results. Next time, I will lower the temperature to 325, because I used glass loaf pans. Also, a little vanilla, cinnamon, and baking powder might improve the flavor & texture.

Garlic Cheese Grits with Shrimp

I doubled the sauce and added fresh basil. WOW!!! To make the grits more creamy, I added half-and-half. This is real comfort food. I didn't have fresh tomatoes, so used canned, diced tomatoes. I could lick the saucepan dry, it was so good.

Best Spanish Rice

This is the BEST TASTING Mexican rice!!! It is delicious!!! Be sure to use a mild salsa, if you are sensitive to spice.

Homemade Fresh Pumpkin Pie

I cooked in Italy, without canned pumpkin, canned milk, or brown sugar. Directions are excellent for cooking a real pumpkin. There was enough cooked pumpkin for two pies. I substituted white sugar, fresh milk, and real pumpkin. To my surprise, the pie was delicious.

Creamy Vanilla Pudding

Almost out of cornstarch and vanilla, I had to substitute 2 tablespoons of cornstarch and 3 egg yolks, to thicken the mixture. I used a packet of powdered vanilla. Despite the changes, the pudding was delicious.

Grilled Bacon Jalapeno Wraps

DELICIOUS !!! I baked the peppers, elevated, in the oven, and substituted cheddar cheese. Everything is better with bacon on it. I was surprised how mild cool the fully cooked pepper tasted.

Dee's Roast Pork for Tacos

The roast smelled heavenly while cooking, but lacked the right seasoning. Perhaps a touch of sugar. The meat swam in grease. If I make bulk pork roast for tacos, I will season the meat with garlic salt, pepper, and bay leaves.

COOK ONIONS LONGER!!! I follewed the directions exactly and discovered that the onions were undercooked. It was too late to correct, because I added the sour cream. The flavor was good, and I added Worchestershire Sauce for more flavor.

Spring Asparagus Salad

The most important thing is cooking the asparagus. One minute makes a huge difference between mush and crisp. Go for 3 minutes, maximum. The dressing is excellent. I toasted white sesame seeds and used half the amount.

WATCH THE SALT I used packets of smoked salmon, camper/hunter's kind. The recipe was too salty, so I doubled the corn. Delicious.
