Fluffy Pancakes
I have been making this recipe for over a year now and it is perfect every time. By far the recipe my family likes the best. And we have eaten a TON of pancakes since we make them every weekend. Sometimes we make a few extra to freeze for during the week. These are my adjustments and suggestions. This amount is perfect for my family of three- if you have more people you'll need to increase the recipe. I usually add a bit of vanilla to the recipe sometimes some cinnamon. Also, as I have traveled to a developing country in the course of my pancake making I would suggest using either slightly more flour or slightly less milk/water if you are using powdered milk as it may be a bit more runny and the recipe is the perfect consistency on its own. If you have young children who insist on using syrup this may be a bit too much sugar so sometimes I decrease the sugar in the pancakes; however, I personally like the sugar and don't use any syrup especially when using the cinnamon. Oh one thing I should point out about the recipe, if you are new to pancakes- DO NOT EVER mix until all the lumps are gone, you will kill the gluten and the pancakes will be a runny rubbery mess. You went lumps and bubbles in the batter before you use it.

Minced Beef with Black-Eyed Beans
This was good, I liked it. I ,however, am far more heavy handed with the spices and added considerably more(can't say how much I tend to eyeball rather than measure). And I guess I didn't realize until now how much I changed it too. I usually keep Ginger-Garlic Paste and Green Chili Paste on hand so I used that. I use cayenne in place of chili powder always. I ALWAYS have Nigerian Tomato Stew so used that in place of tomato sauce (this is really great for everything, if you haven't tried it-allnigerianrecipes.com-oh and a tip, use less diced onions in a recipe you add it to since the sauteed onions can make it sweeter). Also added spinach. I was out of riata but that would definitely have been very good with this. Possibly may have added mango powder but i couldn't remember. Definitely remember adding coriander.

Old-Fashioned Pancakes
I tried these this weekend and thought they were wonderful and easy. I'm giving this 4 stars instead of 5 due to my opinion that there is way too much salt. Cut the salt in half at least. I did also add vanilla. But these would be wonderful without the vanilla, as long as you cut the salt down. Also I thought these cooked MUCH MUCH better than the Bisquick. I have no idea why I've bought the Bizquick for so long. I don't even use the add water kind. These are a permanent in my house-minus some salt :)
