Yummy Honey Mustard Dipping Sauce

I always try to follow the recipe just as written the first time I make it but I didn't have dijon mustard only spicy brown. The spicy brown made it just a little too "mustardy" for me so I added just a tad bit more honey and maybe 1/2 tsp. corn syrup and it balanced out really well. My husband loved it also. Next time I will make it with the dijon and I'm sure it won't need the added corn syrup and honey. Thanks for sharing!

Broccoli Ham Ring

I've been making this for years but with cooked and cubed chicken rather than ham. I've even made it using "meatless chicken" when I needed a vegetarian alternative. It's always a huge hit at any party and people always ask for the recipe. It's easy and impressive which are my two favorite qualities in a recipe!

Slow Cooker Mashed Potatoes

These are the best mashed potatoes! I've been making them for a couple years now and only had one mishap with too much liquid which made them not quite a soup. I have also made these with white potatoes and they turn out just fine.

Gingersnap Dip

My husband was helping me prepare Thanksgiving dinner and I asked him to make this. He is a good cook but never uses recipes so it was a first for him and it turned out great. I would have added another tsp of spices but since it was his first attempt to follow a recipe I didn't want to mess him up. :) This was fairly well received but I think I liked it more than other people. Part of it may have been the store bought gingersnaps though. The dip was good but the cookies are so hard and the ginger was overwhelming the dip that a lot of people wouldn't eat them. I will make this again but make sure I have apples and a milder, softer ginger cookie. I like the idea of adding pumpkin to it and will try that. I think that is what will make this a perfect holiday dip.

Sweet Potato Casserole VI

I'm not a big fan of sweet potatoes but I saw a recipe similar to this one on a TV show and it looked so good that I thought I would give it a try. It turned out very good and I even overheard a comment that it was "amazing." Here's the couple little changes I made. I peeled and diced the potatoes and baked them in a pan covered with foil. When they were soft I mashed them and added the milk - oh, I used evaporated milk. I added a dash of pumpkin pie spice - maybe 1/2 tsp or a little more. In the topping I added about a 1/2 tsp. of cinnamon. I made a second batch with Splenda to cut down on the sugar for the few diabetics that were at our Thanksgiving party and the ones made with the Splenda were just as good. In the Splenda batch I only used about 3/4 cups sugar in the potatoes but the same amount of brown sugar Splenda for the topping.

Libby's® Pumpkin Roll with Cream Cheese Filling

This was my first attempt at any type of cake roll. I read the reviews and after all the ones stating how easy it was I gave it a try for Thanksgiving. It really was easy and a big hit. I followed the recipe except I used about 2 tsps of pumpkin pie spice instead of the spices listed in the recipe. I also used waxed paper to roll it in rather than a towel and it worked fine. The cream cheese filling was the perfect amount and I didn't have a problem with it squeezing out the sides, although I only spread it to about an inch of the edge of the cake so as I rolled it would push itself out. I highly recommend this recipe and if you are hesitant to try a cake roll I encourage you to go for it because it really is easier than it looks!
