Old Fashioned Coconut Cream Pie

Outstanding! Do the 1/2 coconut milk & half/half or whipping cream. Plus, do the 2 cup portion of boxed whipping cream for top. Use the frozen/fresh coconut for pudding center and save bagged stuff for top/browned. Wonderful!

Pesto Cream Sauce

I did as suggested and added a little more flour and a little less butter. This is a delightful dinner. I'm vegetarian so I left out the shrimp. Scrumptious!

Easy Vegetable Pot Pie

Oh My! I followed this just as described, (precooking the bottom crust a bit) using Marie Callendar's pie crusts. I also added Morningstar Farms spicy wings (cut up) for protein. It's going on the table Thanksgiving! Thanks so much!

Baked Potato Soup

Add more potatoes. I used sour cream (8 oz) with skim milk. Also, I added 3 cans of veg. stock and lots of onions. Zap 5-6 potatoes in the microwave - comes out fine!

Sausage Casserole

First: I used frozen shredded potatoes as suggested by some. I also added onions to this and lined a 9x13. Precooked for 30 minutes at 350. Then put together remainder using vegi sausages - excellent. Cooked additional 30 min. at 350 and it was done although an additional 5 would have worked too. Perfect for group of people at home or office.

Turkey Pot Pie

I too changed a few things based on other recommendations. First I used morningstar chikin strips as turkey sub as I'm vegi. I did a homemade crust and PREBAKED for 7 min. I also let filling misture cool for at least 10-15 min. before filling crust. As far as broth, I used one 14 oz can and 2 oz of water (for conven.). The butter, flour, milk part: I increased butter/flour and also added 1 C of whole milk; I'd increase milk even more next time to have more of a gravy texture as cooked meal was solid. I skipped the pie top and replaced with Stouffers Turkey stove top where I'd added walnuts, onions, and celery. Don't use pie plate. I used a 13x9. It was perfect. Family of four will finish it tonight as somewhat of a side dish as we did consume more than half last night!

Oatmeal Soda Bread

Easy to make and delicious. I made it with the Baked Potato Soup recipe on this site. Very easy to put together. I baked it 47 minutes and stuck a steak knife in the center to make sure it was done. Interesting texture as it breaks easily by hand.
