Black Chocolate Cake
Really delicious. I made this for my older son's birthday cake today. I subbed one cup of boiling coffee for 1 cup of water and used canola oil in place of shortening. I baked it in a bundt pan....I'd say about 45 minutes, maybe 50 minutes (till it tested done). Not only was it delicious it was a perfect texture, moist and tender but not mushy. It came out of the pan quite easily. Earlier in the day we were talking about tailgating at my younger son's college game in a few weeks and deciding what to make. Halfway through his cake he said "you can make this cake to bring". There you go...enough said! Thank you for the recipe.

Slow Cooker Latin Chicken
Very good and perfect for these fall days. I ddin't brown the chicken first just placed in pot, salt and pepper and then the 1/4 c of cilantro and proceeded as per recipe with 2 changes: subbed i can corn for 1 can of black beans and doubled the sauce. I cooked on low for 7 hours. It cam out a bit like a stew with the extra liquid bit that was fine to serve with rice. The medium salsa still gave it a nice kick. One comment, though, after the 7 hours the sweet potatoes were just done. If you were cooking less time they would really need to be cut very small. Delicious and healthy.

Applesauce Bars
Very yummy! These whipped up quite quickly, too. I used canola oil in place of butter to make lactose free and added 1/2 cup of raisins. Cooked them in an 8.5 square pan and they were just the right size. When cut they were like brownie size. The taste was great and so different than your typical brownie or bar. They were so moist and flavorful without being too much or too rich. I did not add the frosting or powdered sugar....none needed. If you like spiced cake/cookies/hermits then you will like these. Thanks for the recipe.
