Poor Man's Beer Batter Fish

These were so good! We saw this in a recent AR magazine & had to try it during 'beer batter' night. Delicious! We used Bud Light Lime & it was a hit with everyone.

Baked Spaghetti

This recipe was a hit here at our house! I made two changes to it, based on reviews and personal preference. I subbed the cottage cheese with ricotta cheese and the ground beef with Johnsonville Mild Italian Ground Sausage. This tasted great! The only complaint I have is the recipe calls for too much pasta in my opinion. I'd use maybe half of what it calls for next time.

Baked Smoked Sausage Spaghetti Casserole

We enjoyed this but like LagunaLala, I would suggest adding some more seasoning. Also, if I made it again, I'd omit the 3/4 cup of water as I prefer a thicker sauce. My husband and the boys cleaned their plates, we rarely use crushed tomatoes but they were really good in this!

Slow Cooker BBQ Pulled Pork Sandwiches

I absolutely loved pulled pork. So I was very excited to try this recipe. I have to admit, it wasn't what I expected. I prepared it exactly as written with the exception of not using wheat buns (we do not eat those) and have to rate it at three stars for a few reasons. First, the flavor. I of course expected it to be somewhat sweet with the honey added in. It was TOO sweet. Also, the amount of barbeque sauce it calls for wasn't nearly enough. My meat definitely wasn't saturated in sauce like the photo provided. I added more directly to my sandwich. Second, the slaw. I love slaw, as does my kids. But this one was just not good. The honey, jalapeno and lime killed the flavor of the cabbage entirely (I like being able to taste the veggies too!) We ended up eating our sandwiches without it after all of us tried the slaw on a test sandwich. Another thing I noticed - the ingredients say 1 teaspoon cumin, divided. However, in the directions, it calls for 2 teaspoons cumin total. I ended up splitting the teaspoon as I rarely ever cook with cumin and didn't want to overdo it (I couldn't taste it so maybe its supposed to be 2 teaspoons.) Lastly, a note for people who don't normally cook pulled pork in a slow cooker. There will be a good bit of liquid in the bottom when you pull out the meat. The recipe doesn't state what to do with the liquid. I removed it as it would have been too soupy otherwise. We all finished our sandwiches, it wasn't horrible, I just wouldn't fix it again.

Chicken and Dumplings I

Good base recipe, however, it needed a few tweaks after the initial try. For this much broth, I used 3 cups flour. I also omitted the egg. Turned out perfect that time, very similar to another recipe I recently discovered which is what turned me off of using the egg this time around.

Great basic recipe! Love adding in green onions and corn when we're in the mood. But when we're in a rush, this alone will do! Not too dry for us at all.

McCormick® Chili

A simple recipe we've went by for years thanks to McCormick (for those days you don't feel like doing it completely from scratch.) We always top it with cheddar cheese or sour cream. Delicious!

Italian Mini Meat Loaves

These were delicious and very easy to prepare. The only sausage I had on hand was venison but I'm glad I used it. This recipe made it very juicy. All the flavors in this went very well together - the hubby and kids all loved it. Next time I won't be as stingy with the cheese, great recipe Paula!

Oven Fried Potatoes I

Great, delicious meal. I was skeptical of the raw bacon like others mentioned but it was so good. The only tweak I made was I omitted a few pieces of the bacon. Mine did not come out greasy at all (let them set up a little bit after pulling them out before we ate them.) Will cook again, definitely!

Salisbury Steak

My family and I thoroughly enjoyed this recipe. I did not have any condensed French Onion soup on hand, so instead I mixed together a pack of dry onion soup mix with a can of cream of mushroom and chicken soup. So glad I did this - the patties were mushy as it was (I can't imagine them staying together if I'd have used the soup it called for.) I made the patties *in* the pan as they cooked, I'd put in a spoonful at a time until it all stuck together. The sauce itself was delicious. I'd never had Salisbury steak before but my husband said this tasted close to the one he had as a child. Next time, I may tweak a little but great recipe. I'll definitely fix it again :)

Crispy Fried Chicken

This is the recipe I've followed for awhile now and it produces perfect fried chicken every time - we never have any blood in the center (which was always my problem with other recipes.) Over time, I've changed 3 minor things to our liking. 1. Instead of paprika, I use garlic powder. 2. I mix an egg into the buttermilk (it helps it stick more.) 3. After its fully cooked, I lay it out on a baking rack over napkin covered plate. It seems to get even crispier this way. Great, great recipe!

Egg in a Hole

One of my favorite breakfast recipes. To save time some mornings, I toast the bread, butter it, fry up the egg and toss it on top. But for the days I want it to be cute and have the time, I go this route.

We love using bacon grease to fry or scramble eggs. I only cook one piece of bacon per egg and sometimes set the egg on a napkin to absorb any extra grease before serving.

Cheesy Chicken and Potato Casserole with Bacon

Due to a picky husband, I replaced the diced potatoes with onions and peppers (and green onion) with sliced potatoes only.Instead of shredded chicken I left it in chunks for quicker prep time. I also tossed in a can of cream of cheddar soup. Followed the rest as is and it turned out delicious!

Mezzi Rigatoni with Chicken Thighs, Rosemary, Lemon Zest and Roasted Garlic Sauce

I will start off saying we all enjoyed this dish. I did make a few mods, though, due to convenience and preference. We had dried rosemary on hand and like Blender Woman, I've never cooked with fresh rosemary or sprigs of any kind. I wanted to avoid the bits stuck in our teeth. I used boneless, skinless chicken breasts as I'm the only person in our household that eats chicken thighs, not to mention how much more work that would be. I had lemon juice on hand and much prefer its flavor to zest so I used that in its place. Our store only had regular rigatoni so that's what I used for the pasta part. Quite a few changes but I believe it still had the same base flavors. I really liked the zing the lemon gave the sauce!

Starbucks® Caramel Frappuccino Copycat Recipe

Loved this recipe! We are over an hour away from the nearest Starbucks, between gas and the cost of the drinks themselves, its a rare splurge for me to get one. This is my absolute favorite there and this recipe is pretty darn close. I've been tweaking the amounts in it (I like mine a little stronger than this) but still 5 stars in my book. I do omit the topping, the drink is good enough for me :)

Slow-Cooker Lasagna

This is the only kind of lasagna I've ever made and we love it! It's so quick and easy and I love I can just set it and forget about it for awhile without risking burning it. We always increase the meat (we've used hamburger, sausage and venison) and cheese just a little (so there's plenty of leftovers.)
