Fantastic Black Bean Chili

As a person who cooks chili at least twice per month, every month :) I can say this recipe is really decent! My husband is on a diet so I wanted to give turkey chili another shot--- and we're both glad I did! I too used 28 ounces crushed tomatoes, added a 4 oz can of diced jalepenos, about 1/2 cup chicken broth, California style garlic salt, fresh ground black pepper, and a small onion (added late to preserve crunchiness). This recipe tastes like something we've had at On The Border restaurant. Definitely good and a great, healthier alternative to traditional chili. Even without my additions-- I think it'd be really good; with my additions it's noticeably spicy...yum!

Spicy Bean Salsa

Good recipe. I'd suggest adding as many jalepenos as suits your personal taste buds-- I probably doubled them when I made this; I used fresh and canned jalepenos. The heat is initially noticeable but continues to grow nice and steady. Preferred eating it with Hint of Jalepeno (Tostitos brand, I think) scoop chips and we tried several; I would definitely suggest a STURDY chip as this dip is chunky/heavy. Keeps for several days and this recipe makes A LOT of dip. If you're not a fan of black eyed peas-- shouldn't be a problem-- they're not noticeable (agreed by my non-pea eating husband). Based on reviews, I omitted Italian dressing completely.

Chili Rellenos Casserole

I made this especially for myself and my 15 year old son since we're the chili relleno eaters of the household. I prepared it in a 6x6 pan. It was quick, easy, and it was all eaten. I liked it b'c it was different from the scrambled eggs/chilis I make (although it was similar). I used red enchilada sauce on top which really added to the flavor.

Quick Hoppin' John Soup

I made a double batch of this for New Year's Eve/ New Year's Day 2009 and now I am thinking I should have tripled the batch! My family of four loved it. Even my non-green eating husband enjoyed it and my picky eating 13 y.o. daughter had 3 consecutive servings. The only changes I made were: I used Polish style sausage link quartered and browned (I did NOT double this due to fat), added a green pepper, and garlic salt. Served with Glory Foods brand Southern Style Seasoned Collard Greens-- and this combo was freakin' awesome! Seasoned individual servings with hot sauce and/or diced jalepenos. We thoroughly enjoyed this recipe and will make it again. Also, in preparing my double batch, I inadvertently used 28 ounces of diced tomatoes rather than 56 ounces but they were never missed (and I love lots of tomatoes). Very aromatic & flavor- popping when combined with the Glory greens.
