Fettuccini Tomato Rustica II

I was looking for a chicken fettuccine recipe, and since I already had some sun-dried tomatoes, decided to make this. It is delicious, quick and everyone liked it. What more can I ask for in a recipe?

April's Chicken Fried Rice

I added two tablespoons of soy sauce and sprinkled a few drops of sesame oil into the pan as I was combining everything, then stir-fried it all for a couple of minutes to blend the flavors. It was delicious - did not need anything else.

Fire Roasted Tomato and Feta Pasta with Shrimp

A little overly-tomato flavored for me, but a very tasty meal. Used some Schwans' 6-cheese tortelloni, and a pound of 16-20 per pound shrimp along with the fire-roasted tomatoes.

Wine Baked Potato

I fixed it with some marinated grilled chicken, and since I only have one oven, I cooked them in the microwave sliced, with onion powder, olive oil and white wine dribbled over. Not much flavor until we salted them, but at least it was a change from the usual "baked with sour cream and chives."

Baked Salmon II

I loved this recipe. The salmon was thoroughly cooked without being limp and soggy, which my family does not like! I put the salmon and marinade into the banking dish then covered the dish with aluminum foil. 45 minutes was exactly right.

Ham and Cheese Pasta Bake

Needed to do something with almost a pound of leftover ham, and this worked. Don't know why these recipes seem to not include salt, since I find all pasta recipes need salt - pasta having virtually no flavor without salt. Anyway, I found it acceptable as a way to avoid having to throw away ham, but other family members really liked it. I did pre-cook the pasta for 5 minutes since I personally do not care for the heavy starch taste in the food when the pasta is cooked with the rest of the ingredients, cut the water back to 1/3, and baked it for 30 minutes without the aluminum foil, just like I cook baked macaroni and cheese - the cheeses melted over the top were a nice addition.

Catfish Creole

This was tasty, although it really needed salt, and due to the varying tastes of family members, I did not put the hot sauce in while it was cooking, but on the table to be used as desired. It is another handy way to cook catfish.

Simple Cajun Seasoning

I added the onion powder, garlic powder and celery seed as suggested, and it works really well in recipes. I personally like my food less spicy, so instead of 1 tablespoon of everything after the salt and oregano, I used one teaspoon, including the recommended additions, which was fine for me. Other family members would like it much spicier, but...

Pan-Fried Wild Salmon

This is a very simple, basic recipe. I think it could be picked up a notch with maybe a little lemon juice, perhaps a pinch of onion or garlic powder? I enjoyed it more than the rest of my family did - they were diplomatic and ate theirs, but didn't want any more...

Italian Vegetable Soup

Very good, and with more liquid, very much reminded me of the soup,salad and breadstick lunch at Olive Garden. Even my son, who is not a "soup person" asked for seconds! Had enough to put into meal-size portions in the freezer for use later.
