Sam's Famous Carrot Cake
Excellent Carrot Cake! I did not add coconut. I used 1 cup regular flour and 1 cup whole wheat. I used the leftover crushed pineapple and made a nice jam like glaze that I added on top of each piece as served. Rave reviews from everyone. My mother-in-law said it was the best carrot cake she ever tasted. I found it to be moist, but not greasy. In fact, I am craving another piece right now! I will make this again for sure.

Cousin David's Slow Cooker Brisket
Don't know if this is a Canadian thing or not, but could not find brisket except Corned Beef which I knew not to buy. Bought another cut, nicely marbled. The sauce/gravy was a bit too tangy for our liking. The meat sans sauce was quite dry. Going to use leftovers with brown gravy instead. Tossed the chili sauce.

Hermit Bar Cookies
These are very tasty... just finished 2 with a big glass of milk! I had a bit of a challenge with the "4 long strips". I won't even describe what the first one looked like. I ended up making 1" balls, flatten slightly with a fork and made as cookies instead. I did add the extra flour as well. I also soaked the raisins first. I would certainly make these again.
