Taco Stuffed Shells

Broccoli Risotto with Cream and Lemon

Turned out great. I used aspargus instead of broccoli because that is what I had on hand and I like better. Imagine broccoli would taste just as good as it did with aspargus. This is also my go to recipe now for basic risotto.

Pesto Polenta Lasagna

Turned out great. Nice alternative to regular lasagna, we are adding it our rotation to break things up because we eat alot of pasta. The polenta is a nice creamy alternative to noodles, otherwise it tasted just like lasagna. It was easy to make using premade pesto, and packaged polenta. I did use my own marinara sauce, but we always have that on hand so still very easy for a good home cooked meal!

Hearty Fettuccini Bolognese Sauce

I love ragu or bolognese sauces and have been tweaking the one I usually use. This recipe was great and seemed to solve all the problems of the one I had been using. Turned out perfect, and as always well worth the time and effort! Classic bolognese with good flavor.

Wisconsin Native's Beer Cheese Soup

As a lifelong resident of Wisconsin, this soup passed the test. Much better than boxed versions, and still easy to make. Skipped the popcorn though and just added crackers. Also used high life light for the beer, because that is what I had on hand and still tasted great.

Creamy Lasagna Casserole

Potato Leek Soup III

Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce

The sauce was terrible, we wouldn't eat it. I don't know if that is because of my cooking or my flavor preferences, but the rosemary was overwhelming, and the sauce was bitter. Adding more chocolate to try and salvage it didn't work either.

Mexican Style Shredded Pork

This turned out great. I gave 4 stars instead of 5 since I made some alterations. First I couldn't find chipolte sauce anywhere, I used whole chipolte peppers in adobo sauce instead. I also added some orange juice to the slowcooker to counteract some of the spice the whole peppers and adobo sauce were adding. The rice with lime juice and cilantro however didn't turn out, no flavor for some reason.

Eggplant Parmesan II

Turned out great. I had never made eggplant before, and the end result matched restaurant versions of eggplant parmesean. I did bake mine longer than the recipe indicates though because I like crispy crusts. In the first step I baked each side for about 8 minutes. After the sauce was added I am not sure how long extra it baked, probably about 15 minutes, the time it took for me to make up dinner plates of something else for my husband and child who wouldn't touch eggplant with a ten foot pole.

Pizza Dough I

Super easy and crust turned out great. This isn't take out pizza crust, but it matches and beats the boxed versions of make at home pizza dough from the grocery store.

Mama D's Italian Bread

I gave this recipe 4 stars because the bread turned out great as far as the crust and consistency of the bread go. However, it would only be 2 stars flavorwise. Next time I will add more salt and some pepper and/or herbs. Bread takes a long time, but is worth it if I can find the right flavor combination.

This chili was good, but had to much beans. I may have ruined it a bit myself though with the substitutions. I don't like kidney beans so I used red beans instead.
