Cracked Sugar Cookies I

We just made two batches of these cookies, and they are simply delicious! For the first batch, I followed the recipe, but we rolled them in red sugar(holidays). They were beautiful, moist and delicious. For the second batch, I ground a whole nutmeg in with the sugar (I wanted a cookie to complement the egg nog). Delicious!

Ham and Potatoes Au Gratin

This has excellent flavor, but the recipe needs some modifications. First, for raw potatoes, the cooking time is about 2 hours at 350 degrees. This is fine as long as you know it and plan ahead. Second, you will need to double or triple this recipe to feed your family (the original recipe is for about two servings). If you triple it, you will need to triple the ham, potato and onion portions, and you will need to **double** the sauce. If you triple the sauce, there will be too much liquid and oil. Again, the flavor is wonderful, and it is a good way to use up leftover ham.

Scalloped Potatoes and Onions

Delicious! I made this recipe on Christmas morning, and put it in the oven and forgot about it (we had a very busy day). Everyone thought that the flavor was incredible, and it was the perfect companion to my Christmas ham. Very easy and very good!

Cornish Game Hens with Garlic and Rosemary

This is an excellent dish. I did not have fresh rosemary and used dried. The aroma in my kitchen was wonderful, and the gravy, which I thickened with a bit of flour, was delicious. I am not a fan of cornish hen, but I am now due to this recipe.

Rosemary Ranch Chicken Kabobs

This is a very easy recipe that produces wonderfully tender chicken. I used 1 tsp of salt in the marinade and sprinkled seasoned salt on the chicken itself before adding the marinate. Perfect, and left-overs are still tender.

Simple Country Ribs

Spiced Slow Cooker Applesauce

We picked a peck of Fuji apples and used them for this recipe. The applesauce is excellent! Using brown sugar and pumpkin pie spice, I seasoned to taste, making sure not to make it too sweet. I served it hot over ice cream -- we loved it.

Cornbread Chicken Pot Pie

Pure comfort food! After looking over the reviews, I decided to replace the 8 ounce can of corn with a 14.5 ounce can of cream corn (to add more liquid). I also added sauteed onion and garlic to the chicken. My choice of cornbread mix (Jiffy) added sweetness to the pie.

Mom's Stovetop Pork Ribs

This is delicious! The flavor is excellent. The result looked more stew like than the picture, so be prepared. The cooking time is more like 2 hours.
