Slow Cooker Cilantro Lime Chicken

Perfect for taco night! I love this recipe - super easy to throw together, a little bit time consuming to shred the chicken, but the end result is worth it. I accidentally doubled the salsa once, and then I kept doing it that way because it was so good! I also usually use dried cilantro, and it's still delicious. Once it's shredded, I often add a couple chopped up chili peppers to give it a little more heat, or add a can of black beans to make it go a little further.

Dark Chocolate Bacon Cupcakes

This is my absolute favorite, go-to chocolate cake recipe! I have yet to actually make it with the bacon, so I've just left that out and made it as a standard round layer cake or cupcakes. I almost always use Hershey's Special Dark cocoa, which makes a huge difference. I used a store brand regular cocoa powder once, and it just wasn't the same. Definitely a great recipe if you're looking for moist, chocolatey cupcakes!

Spicy Garlic Lime Chicken

This is my go-to chicken recipe! It's also fantastic with pork chops. I often use a couple chopped up chili peppers instead of the cayenne, to increase the heat a little. Served up with some fresh steamed veggies, this is one of my favorite meals!

Zucchini-Chocolate Chip Muffins

Delicious! Used regular chocolate chips instead of mini, and no walnuts, and they turned out great. I brought them to Sunday school and everybody loved them! I'll definitely make this one again.

Basic Corn Muffins

Definitely a good, reliable recipe! I halved it, to make a half dozen, and still used one egg, so I think they turned out a little cakier than they should have. I imagine if they were a little bit denser and moister they would have been even better!
