Microwave Tacos

I struggled whether to give this 4 or 5 stars. I thought it was 4 before my additions and 5 after. I cooked on stove and was thrilled to not have to chop an onion~ one less step! I went easy on the cayenne and next time will reduce the salt a bit as well. Thought it was okay as is, but thought it needed more depth of flavor. Added about a tsp of cumin and a generous sprinkling of onion powder. Now it's just right! Bring on the tacos!!

Boilermaker Tailgate Chili

I made this pretty close to recipe to check it out. Loved it!!...although too spicy for us, a great recipe to start with!!!! I hate buying seasoning packets and loved the flavors of these but next time will cut back on cayenne and chile powder. Lost my mind and used jalapenos, but next time will def use Hatch New Mexico Green Chiles. Used ground tri-tip and Mild Italian Sausage...next time will use a cubed and browned beef roast and either Hot Italian sausage or chorizo. (Thought the occasional flavor of the mild Italian sausage was a little odd.) Also used real bacon and browned veggies in the bacon drippings. Overall...it was delicious...I think it was probably one of the best chili recipe's I've made. Right up there with my Mother-In-Law's Texas Red (no bean) chili. I'd love to make them to taste side-by-side...after my stomach calms down, lol! Beans, no beans, there's room enough in this world for all of it!! Thanks for the recipe!! LOVE IT!!!!

Butternut Squash Soup with a Kick

Excellent!!!!! Made to serve before Prime Rib on Christmas. I microwaved the squash to cut it, then roasted it in the oven before scooping out into the soup pot. Next time I'll use an extra Jalapeno for sure. I added a few teaspoons of jalapeno sauce to taste to the pot (triple batch), which 3 of us agreed it needed. The sour cream on top was pretty but not necessary. LOVED this recipe and can't wait to make again!!!!!!

Delicious Pizza Sauce Recipe

Can't believe I've never made pizza sauce from scratch before. SO easy! This recipe is delicious!! I subbed what I had on hand, diced tomatoes and tomato sauce, dried basil. (mashed up with potato masher after cooking awhile) Did add oregano and extra garlic. Can't wait to try this with San Marzano tomatoes!

Chicken Noodle Soup

Loved it!! I stewed the chicken w/seasonings/herbs and onion 1st, then sauteed more onion with other veggies (doubled) and fresh garlic before adding the strained stock back in. No noodles on hand, so added 1/2 c. of uncooked rice. Also threw in some leftover roasted potatoes, diced. Okay, so I veered a bit...BUT basically this is great! p.s. I dislike dried thyme but like ground, so used that and used dried and ground marjoram. Yum!!!

Refried Beans Without the Refry

I've made this several times with several variations...I'm very happy with: I make a double batch of this once or twice per month..(1/2 c./day is good for lowering cholesterol)..I degass the beans, [bring to boil rinsed beans on stove for 2 min., remove from heat, SLOWLY add 2 Tbsp baking powder while stirring, let sit covered for 2 hrs....rinse well 2 x's] I proceed on stove with: no onion, 1 whole fresh jalapeno for flavor, reduce pepper a bit, cumin, no salt, chicken boullion, garlic powder instead of fresh, onion powder. Cook on low for 2 1/2 hrs. I set most aside and mash a little for my daughter...delish! Freeze in small quantities for later. Thanks for the recipe ChefClaude!

The Best Red Enchilada Sauce

HOLY SMOKES!!! This stuff is great!! I used Dried California Chili Pods (because I decided at the store to make sauce and THEN searched for a recipe) This stuff is the bomb...we want to drink it out of a glass. I better hurry with the enchiladas or there will be no sauce left to make them!

Quick and Easy Chicken Noodle Soup

Loved this recipe as well as Diane Edgecomb's. I started with my own broth from scratch then tripled veggies, sauteed w/garlic in butter. Added poultry seasoning and ground thyme. Excellent recipe!!!

Slow Cooker Ham

I thought this was delicious!! I used most of the sugar and a splash of pineapple juice, (which wasn't needed I don't think) Plenty of juice came off my 9 pound ham. I reduced it on the stove and will make a sauce to drizzle over the sliced ham at the next meal. The ham cooked to my satisfaction in my (newer-not-so-slow) slowcooker in about 4 hours. Wasn't falling off the bone yet, but needed a meaty bone for my New Years Day Bean Soup. Next time..and there will be one...I'll let cook longer. Thanks for a super easy, delicious recipe!!

Bread Machine Garlic Bread

I loved this very easy bread but changed a little, biggest changes were olive oil instead of butter, added fresh garlic and used Herbes de Provence instead of parsley. Will make again for sure!!!!

Basic Ham and Bean Soup

Fantastic!!..once I added some chicken boullion and a little garlic powder. I crocked Navy beans, ham hock and water on high for 4 hours then added the rest, minus ham for 3 more hours. Didn't have ham and didn't miss it. It tastes almost like Campbells Bean and Bacon..my favorite as a kid. I am shocked...the toddlers are eating it, "Hey Mikey!" For a nostalgic treat, crushed Ritz crackers on top....Yum!!

Corn Dip

I loved this and had many compliments on it. I used C&W Frozen corn and added some diced fresh green and red peppers. Subbed lowfat sour cream and added some extra jalapeno, salt & pepper. Will add extra diced mild green chilies next time...there WILL be a next time! I served in a Hawaiian Bread bowl. Great with corn chips and bagel chips too.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

I'm amazed. Went according to directions (doubled)and ruined the eggs. Shell stuck to whites and they were UNDERcooked. BTW..did have 3 older eggs in pot, those shells did not stick. Now I need to start all over. Thankfully I have another 18 pack.

Tuna Noodle Casserole

Was amazed it all fit in an 8x8, but it did. Would look more presentable topped with a little extra cheese. Very good! It was hard to stop eating it. Delish also topped with Crystal Hot Sauce, similar to Tabasco, but better....more tang, less heat.

Yummy Sweet Potato Casserole

Loved it! My husband also liked it and is NOT a sweet potato fan. I used 1/2 brown 1/2 white sugar in the casserole and used Cream of Coconut since I was out of milk and reduced the amount a bit. Also reduced the butter a bit. Awesome!

Debdoozie's Blue Ribbon Chili

Great, made for a potluck and got many compliments. Used Lawry's chili seasoning since we couldn't find Williams, (as Deb noted in her review) and Med. Pace Picante. Next time will probably add fresh garlic. Great over a baked potato!!

Chinese Pork Ribs

Delicious and inexpensive meal when the pork is on sale. I also added Teriyaki and next time will cook down the sauce, to get a richer flavor. Great shredded and served over white rice with the thickened sauce.

Southwestern Turkey Casserole

Very good!! I used 2 cans of cr. of mushroom, no cr. of chicken. Next time I'll decrease the sour cream or omit, start with a little of the soup mix before layering tortilla, increase the green chilies (or add a tad bit of jalapenos) and maybe even add some chopped onion. Would be great with chicken instead of turkey too!
