This is delicious. I followed the other suggestion and squeezed in some lime juice. I minced a small jalapeno for some color and kick. It is now close to perfect. Serving this tonight on grilled salmon!

I tried this out yesterday for a Memorial Day BBQ. I had a bag of Mcintosh apples that I needed to use, so chopped those up with one granny smith and it worked really well! Looks are deceiving - this dessert looks average, but once you pop one into your mouth, you are a true convert. I added the suggested 1/2 cup apple juice which makes it moist and gives more apple flavor and made the cream cheese topping, as another reviewer suggested. I piped the frosting on top in a streusel style. Definitely dressed them up and made them even more tasty. These are going to be part of our family recipes - esp during fall apple picking!!
