Classic Texas Caviar

I liked this recipe a lot. First time trying Texas Caviar. I changed the recipe to my liking and it turned out great. I replaced canned corn for the yellow pepper (didn't have yellow pepper). I also used one can black beans and one can black-eyed peas & doubled the jalepeno pepper. Also, I used just 1 teaspoon of white vinegar and the juice of two limes, real garlic instead of powder. Options are endless... Avocado would be a great addition as well!

Ham with Pineapple

First time making ham for a group of twenty and it got really good reviews. I left out the cloves & used canned real cherries instead of maraschino. For best results, use a bone-in picnic ham.

Coconut Chicken

I absolutely loved this recipe. It was full of flavour. I left out the coconut flakes (not a huge fan) added an extra clove of garlic to the marinade. Followed directions perfectly and my chicken came out juicy on the inside and extra crispy on the outside! Cannot believe it was not fried. Served with brown rice and vegetables made an awesome healthy meal.

Strawberry Dream Cake I

WOW this cake is so delicious! I only used half the cream cheese & it didn't turn out too moist like other reviewers have said. Also, used un-sweetened frozen strawberries & only added 2 tsps. of powdered sugar to those strawberries. The frosting is delicious but does not stay well. I don't recommend this frosting for a 2 layer cake but would be great if you're doing a sheet style. It sort of "deflated" in the fridge and the 2 layers of my cake slipped apart. I am trying this again today with a different frosting.

Southern Sweet Potato Bread with Pecans

Instead of cooked sweet potatoes, I used left over yams that I made on the BBQ. I also left out the pecans and made the mix in a muffin dish. So delicious!

Gail's Raisin Cake

This cake was really yummy & moist. It stayed very moist even after a few days. Everyone in my house loved it - I doubled the walnuts, added 1 tspn. vanilla extract & 1 tspn. walnut extract to the raisin mixture (after cooling). I also substituted margarine for butter because I didn't have any and it was fine.

Quick Clam Spaghetti

Wow, so quick and simple to make! I added some red pepper flakes for a little extra bite. Also I added bacon and deglazed it with red wine. My boyfriend absolutely loved this dish and always asks me to make it.
