G-ma's Rice

This recipe is tastes exactly like my mom (from Mexico) and my Abuelita's rice. Well, I guess I don't remember my mom ever putting minced garlic in, she used garlic powder. It is a family favorite. I was looking for a good Mexican rice recipe on here one night when I couldn't get a hold of my mom for hers. I used hot water and sauteed the onions with the rice, other than that I followed recipe exactly. Tastes like home to me!

Tomato Pork Loin Chops

This was delicious! I followed the recipe (almost) as is since this was the first time I made it. I used about 1.5lbs of thin cut boneless pork loin chops (6 total). The one other change that I made was to add kale since I had some in my frig that needed to be used. I followed the directions, but added the kale after cooking the chops covered for 10 min. I covered the pot for another 5 min until the kale had wilted and then uncovered for the final 10 min. It turned out so good! I definitely will cook it again! I love that it is mainly a pantry dish and only uses 1 pot- these are both essentials as the working mother of 4 school aged children.

Carrot, Potato, and Cabbage Soup

This soup goes over very well in our house, even with 4 picky eaters. The first time I made it I followed the recipe exactly. Delicious. My husband had me set aside a serving for him that was not blended to compare and he prefers it unblended. In the subsequent times I have prepared this recipe I have added whatever vegetables we happen to have in the produce drawer that were on their way out. It has been delicious every time. We typically shred everything instead of slicing them and I don't blend it for the first night, but I do blend the leftovers before I freeze them.
