Mother's Banana Bread

I made a few modifications to make this recipe a bit moister and flavorful. I decreased the sugar to 1/2 cup (1/4 c white & 1/4 c brown sugar), Increased to 3 tsp baking powder. Added 1/2 cup pureed pears and 1/2 c sour cream. Spiced up with 1/2 tsp nutmeg and 1/2 tsp cinnamon. For variance on the flour I split 1/2 whole wheat and 1/2 all-purpose flour and added 2 tbsp wheat germ. This bread turned out great!

Apple Bread

I made some modifications to increase the flavor and healthiness turned out moist and with great flavor. Reduced the sugar to 1 cup and did 1/2 c brown and 1/2 c white sugar. Reduced the oil to 1/2c. Added 1 cup apple sauce as a replacement for the 1/2 c oil. Also added 1/4 c sour cream, 2 tbsp fresh squeezed orange juice and 1 tsp vanilla. Also increased the baking soda to 2 tsp to give a bit more fluffiness and added additional 1/4 c flour due to the other modifications I made. This version turned out moist with great natural flavor and just a good amount of sugar without the overload.

Stuffed Cabbage Rolls

turned out great - I took quite a few suggestions listed here and made a few of my own. Added more spices and seasonings: worcestershire sauce, cayenne pepper, paprika, oregano, basil, parsley, garlic; didn't use tomato soup substituted with a small can of tomato paste and a jar of homemade salsa. Substituted rice for bread crumbs - just personal preference today. Layered cabbage leaves on bottom and top of the rolls and then covered with homemade stewed & crushed tomatoes. Baked in the oven. Served with potatoes.

Easy Apple Cinnamon Muffins

A healthier zest to a good recipe....I added 3 apples, used only 1/3 cup brown sugar instead of 3/4 cup white sugar, added 2 Tbsp orange juice, removed some of the oil and substituted with 1/3 c apple sauce and used 1/2 whole wheat flour & 1/2 white flour. I didn't add the topping since they were good without it. Great muffins - light, fluffy and yummy!

Pumpkin Apple Streusel Muffins

Great recipe. I love to make this with fresh pumpkin or butternut squash. When made with fresh pumpkin or squash it is easy to reduce the sugar without losing the flavor. I reduce the sugar to 1 cup and substitute some of the oil with applesauce. I omit the strudel topping because the muffins are already sweet enough.

Raspberry Almond Coffeecake

I was looking for something to make with the black berries I had picked and this was just the recipe. The coffecake is quick and easy to make and taste great. I added some cinnamon to the batter, substituted white flour for whole wheat flour and put in 1/2 of the butter stated then substituted 1/2 of the butter with applesauce. The recipe was great and moist, yet with a bit less fat.

Pumpkin Bread IV

This pumpkin bread is wonderful and moist. I substitute the canned pumpkin puree with fresh pumpkin puree and reduce the sugar by half since the fresh pumpkin puree adds natural sweetness and great flavor. For another great alternative substitute the fresh pumpkin puree with fresh butternut squash puree. This bread has a fabulous flavor!
