Stuffed Cabbage Rolls
turned out great - I took quite a few suggestions listed here and made a few of my own. Added more spices and seasonings: worcestershire sauce, cayenne pepper, paprika, oregano, basil, parsley, garlic; didn't use tomato soup substituted with a small can of tomato paste and a jar of homemade salsa. Substituted rice for bread crumbs - just personal preference today. Layered cabbage leaves on bottom and top of the rolls and then covered with homemade stewed & crushed tomatoes. Baked in the oven. Served with potatoes.

Easy Apple Cinnamon Muffins
A healthier zest to a good recipe....I added 3 apples, used only 1/3 cup brown sugar instead of 3/4 cup white sugar, added 2 Tbsp orange juice, removed some of the oil and substituted with 1/3 c apple sauce and used 1/2 whole wheat flour & 1/2 white flour. I didn't add the topping since they were good without it. Great muffins - light, fluffy and yummy!

Pumpkin Apple Streusel Muffins
Great recipe. I love to make this with fresh pumpkin or butternut squash. When made with fresh pumpkin or squash it is easy to reduce the sugar without losing the flavor. I reduce the sugar to 1 cup and substitute some of the oil with applesauce. I omit the strudel topping because the muffins are already sweet enough.
