Caramel Sea Salt Dark Chocolate Coins

My 11 yr old son and I made these twice this holiday season. once with pretty cheap dark (but not super dark) chocolate, and once with a high end milk chocolate. The first set came out just fine and it was a fun recipe to do together, as imperfect as our coins were! The second time we used milk chocolate, the chocolate separated when we put the caramel in and we ended up with a bizarre texture and a separated liquid. I think they'll taste fine, but won't have great texture... and I assume this has something to do with the milk in the chocolate.

Peppermint Meringues

I love these meringues, and always make them around the holiday season. I add a few drops of peppermint extract, always. I have never had a problem doubling the recipe, and today I tripled it without issue. When doubling, I have not changed the bake time. We'll see how it works for the triple.

Chocolate Mint Cookies I

These turned out great - much better than I had expected. We decided to try the mint pastilles as the candy center. The cookie looks like a chocolate version of peanut butter blossoms, with unearthly pink and green kisses in the center, but super yummy.

Chocolate Chip Peppermint Cookies

These came out excellent. We added peppermint bark chips. This dough came out as a flatter, crisper cookie than another we tried. Our next attempt will use the Special Dark Cocoa, rather than regular cocoa to get a darker chocolate flavor. They froze very well.
