To Die For Blueberry Muffins

Fantastic! I doubled the recipe and actually got 16 'normal' sized muffins (and by 'normal' I mean a 2.5" in diameter and height). Definitely only one portion of brown sugar topping is needed. Batter is VERY thick (think mashed banana type thick) but it holds berries very well! Don't stir it too much. I only use olive oil in my kitchen and it tasted just fine. Will be keeping this one as my muffin base. Thank you!!

Sweet, Sticky and Spicy Chicken

YUM! My husband eats everything except bananas. He’s the least fussy person I’ve ever met. Whenever I try new recipes his stock answer is ‘Ya it’s good, I’ll eat it again.’ To this he took a bite and ‘Mmmmm! Ohhh mmmm! This is REALLY good!’ Therefore this is a keeper recipe! Alterations to original recipe: Lightly coat chicken pieces with flour (I made half with & half without flour, floured chicken is way better). When you do that, there is enough sauce for 3 chicken breasts, not 4. Thanks for a great recipe! This will definitely be in our rotation.

Crispy Zucchini or Pumpkin Blossoms

Ever cry when eating food? Yup! These are perfect for so many reasons!! My Nonna would send me into her garden looking for male flowers. She’d make these every summer on an old stove in the garage (I’ve never figured out why this was an ‘outdoor only’ type food, her version of a BBQ maybe?). When she passed – the recipe went with her. Seeing as I couldn’t recall what was involved in these ‘petigella’ (spelling?), I checked on allrecipes. Though it’s not exact, it brought back a flood of memories for me. Domenica, thank you for the memories! These are wonderful!

Maria's Portuguese Bacalau

Mmmm tastes like tradition! Personally I find the dried, store bought bacalau tougher/chewier in this dish. Therefore I use (heavily salted) fresh cod instead of dried bacalau. Also, I sliced the potatoes prior to boiling them. The way I see it … slicing raw potatoes is easier than slicing potatoes that are mostly cooked. My father-in-law is from the Azores Islands and he LOVES this dish! Looks like I’ll be making this dish often instead of the in-laws ordering it from the European catering place down the street. This is a keeper!! :-)

Award Winning Soft Chocolate Chip Cookies

WOW! I adore whoever found this recipe!! I didn't think the pudding mix sounded 'right' when I first read this. but it adds this almost creamy texture to the batter (that is so yummy raw) that bakes amazingly well. the cooled cookies do not have a 'pudding taste' instead it's this soft, melt against the roof of your mouth taste. YUM! I was looking for a 'plain' chocolate chip cookie recipe without all the extra nuts, oatmeal, raisins, etc. This is perfect (says the self proclaimed Cookie-Queen)! Suggestions for next time around: 3 cups chocolate chips (I adore chocolate - but 4 cups is just WAY to many) 2 tablespoons vanilla

Slow Cooker Stuffing

Dry out the bread (12 cups = 1 loaf, I used 1/2 brown & 1/2 cinammon rasin) for at lease 3 days. Cooked down the celery & onion in LOTS of butter. It looks like too much butter - but you'll use less chicken stock. I used less than half the required chicken stock and still found it too wet. Cooked without the lid on for the entire time and it was a little less wet by the time I served it. Mom & mom-in-law both LOVED it. They've both asked for the recipe! SCORE!

Banana Sour Cream Bread

OH YUM!! I found the cake to be just great. I was a little thrown by the sour cream, but it made the cake very moist. I did 3rd the recipe because I didn't have that many brown bananas - it still turned out great. Does any one know if this freezes well?
