Easiest Pot Roast Ever

My pot roast turned out drier than expected. I used the 3/4 c. of water that was suggested in the reviews, but it was still dry. I think part of the problem is that I set the meat on top of the veg like it said to do, and that prevented the meat from being immersed in the liquid. Next time I will set the meat in the pot and put the veg around it, and I also won't put the potatoes in until a few hours into cooking b/c they were totally obliterated. I added a small amount of dry onion soup mix as suggested as well. The taste was great, it was just too dry.

Deep Fried Mushrooms

First off I don't think I did it right, but aside from that, it was definitely not the fried mushroom I was going for. Maybe I would have done better in a real deep fryer instead of just a pan.

Corn Pudding

I found it a bit egg-y, but no one else was complaining. My husband LOVED it and told me I should make it other days besides tgiving. I did add a tbspn of sugar.

Sugar Cookies with Buttercream Frosting

I only made the cookies from this recipe, so I can only rate them, but they are delicious and I will definitely make this my go-to sugar cookie recipe. My only complaint is that the dough was super hard to roll out after it chilled, and it got dry and cracked by the time I was cutting out my last cookies. Maybe there is remedy for this that I don't know about.

Mom's Zucchini Bread

Yum!! My husband and I couldn't keep our hands off it. I don't have a food processor, so I just chopped the zucchini really finely, but it definitely didn't take anything away from the finished product.

Well I can't say they weren't delicious. I sure ate enough of them, and all of my husband's coworkers enjoyed them. But I think they might have been better without the marshmallows, or at least just less of them. I followed another reviewer's advice and let the pnut butter, butterscotch mixture cool a bit before mixing in with marshmallows, so they wouldn't melt.

Black-Eyed Pea Gumbo

This is delicous! I made it without onion and celery b/c my husband passionately hates them both. And without green chiles b/c I don't care for them. I added carrots and little bit of salt, pepper, and chili powder. So yummy!

Potato Spinach Casserole

This was delicious! I used fresh spinach and just blanched it before adding to the potatoes. I also skipped the green onions b/c my husband hates them, and used half the amount of sour cream and double the butter just to cut the sat fat a little bit. It was a big hit, but I don't really consider it a casserole. More like just mashed potatoes with spinach in them....haha

Chocolate Chip Pumpkin Bread

I've made this twice now and made no changes to the recipe. It was a huge hit with everyone who tried it (especially my 4 year old sister!). I love it and ate half a loaf in one sitting. My only complaint is that I'm sure it is super fattening, but it's meant to be a treat, not a meal, so that's okay :)

Spinach and Leek White Bean Soup

I made this with a whole box of couscous b/c I read that someone else did that and it actually turned out to be good. I thought that sounded better than a soup. It definitely was! I also made it w/o the leeks b/c I forgot to buy them at the store. It was good still. My 18 month old daughter liked this too! And it made a TON of food. This would make an excellent, nutritious side dish.
