Pan-Fried Wild Salmon

This was SO easy to make and it tasted as good as any other way I've cooked salmon. Way easier than using the ridged pan I use in the broiler. I love the flavor that sea salt gives salmon. I followed the recipe but did not do the salmon skin. Next time I will.

Pork Chops with Garden Rice

This was just okay. What I would do differently next time is continue to cook the pork chops in the pan, as they started out. Salt, pepper, garlic and paprika on the chops is good. Don't put them in the rice mix. I would take the rice mixture out of the oven after 20 minutes, if it's long grain white rice. It was a mushy, mushy (though fairly tasty) ...well...mush.

Butternut Squash Soup II

Excellent! Simple ingredients, wholesome taste. Followed the ingredients. Different--I pierced and microwaved the squash, whole, for about 2 min. per lb. After cooling, I cut it in half and then cubed the insides, scooping the cubes out with a spoon. Very simple. Top with a dollop of sour cream. Mmmmm!

Ginger Glazed Mahi Mahi

It was a nice glaze, but it really hid the delicate flavor of the mahi. Also, medium high heat just burns the sugar/honey if you're not careful. I ended up microwaving the leftover marinade for the glaze because the pan I fried the mahi in needed some therapy (that was without burning the fish). It's a pretty decent flavor, but we live in Hawaii and are quite spoiled by a huge array of ways to eat mahi.

Smashed Cauliflower

My 15 year old and I LOVE this stuff! We steamed the cauliflower then put it in the blender with some milk, parmasan cheese, a bit of butter, salt and pepper. She thinks it tastes like mashed potatoes--one of her faves. Mine too.
