Magic Mango Bread

Reviewed: Feb. 20, 2014
I am yet another person, who used this recipe as a basis. Here are some modifications I did. I put in ginger, no cinnamon. - I made a crumble on top of coconut, sugar, flour and butter with cinnamon. - I omitted the coconut from the bread itself and opted to put on top. - no raisin or cranberries, although I considered it! - I had an overripe banana that I through into the mix - added 1/3 c. buttermilk (for moistness) - omitted the oil - added mandarin zest, and the rest of the mandarin orange beated into the mix - beat the sugar and butter until it was fluffy So finally, it's a totally different recipe all together, and perhaps I should post it as such... vibrant and full of flavor!

Laura's Unbelievable Chicken and Pasta

Reviewed: Mar. 19, 2013
After reading the reviews, decided to doctor it up with a package of Hidden Valley Ranch Dressing seasoning mix....that definitely did it. Just bursting with flavor. Didn't add garlic or onions or anything else. Just the chicken, spinach, and tomatoes. Yum, yum. It's easy an easy crowd pleaser!

Fast and Delicious Black Bean Soup

Reviewed: Jan. 12, 2011
This makes a great tasting bean soup. I was using another recipe that called for one can of bean soup as a garnish. As, I did not have it on hand, I was very happy to find this little work around. It was so easy it felt like cheating. I liked it because nothing complicated with spices and the refried beans give it the desired texture. It was so yummy, I will be using it again to combine with other mexcian meals!

Classic Macaroni Salad with Real Mayonnaise

Reviewed: Sep. 27, 2010
The dressing on this is very creamy. I also added 1/3 c milk to keep it moist, and modified with other goodies I had in the house, shreaded cheese, egg, diced ham... couldn't stop eating it!

Maple Pecan Shortbread Squares

I love these! super simple and yet so delicious! I read the other reviews about it not being maple-y enough. I used just regular old eggo syrup and I thought it was great!

Simple Scones

Reviewed: Feb. 13, 2010
I just love this recipe. I've made it 20 or 30 times, it's so easy. As a matter of habit, I put extra butter in the freezer. I let the butter sit out for about 15 minutes before I start grating it to make the grating go easier and quicker. Blueberry is our family favorite. Also, sometimes I substitute cream fraiche or greek yougurt for sour cream, which seems to work perfectly well.

Chuck's Favorite Mac and Cheese

I like this recipe because it didn't have a cheese sauce you have to cook first. The family agrees. I will definitely make this again. It's easy and tastes great!
