Just made this soup for my family's Thanksgiving dinner. I had to make 24 servings, so it took quite awhile. I gotta say that this is one of the most interesting soups I've ever made or even eaten. The flavors are rich and the aroma makes your house smell terrific. The only change I made was using basil instead of bay leaves. I was unsure as to what kind of wine and apples to use, so I chose Merlot and Red Delicious Apples. I think that was a good way to good. The sweetness of the wine matched the sweetness of the apples perfectly. I highly recommend making this soup. It was pretty easy to do, even for an amateur cook! Two thumbs up!!
