Suki's Spinach and Feta Pasta
This was my first time putting feta in a pasta and I was very pleased with the results. The cheese gets all melty and soft, it totally makes up for the fact that this dish doesn't have much of a sauce. I especially like this recipe because you can add a lot of fresh veggies to it. I think next time I'll add in some zucchini. One thing I think is important when making this dish is to wait to put the tomatoes in. I only mix mine in with the other vegetables about two minutes before I mix in the cooked pasta. That way the tomatoes can heat through but stay plump and juicy.

Skillet Pork Chops with Potatoes and Onion
This recipe simple and fun to make. The results were tasty too. The pork chops were so tender and juicy. My only complaint was that I think the beef bouillon cube was very overpowering and I only used two instead of the three that the recipe calls for. Next time I will only use one. I took the pork chop out of the skillet after a few minutes on each side and sauteed the onions and some garlic. I then layered the chops on top of the onions and then the potatoes. I will make this again with said adjustments.
