Suki's Spinach and Feta Pasta
This was my first time putting feta in a pasta and I was very pleased with the results. The cheese gets all melty and soft, it totally makes up for the fact that this dish doesn't have much of a sauce. I especially like this recipe because you can add a lot of fresh veggies to it. I think next time I'll add in some zucchini. One thing I think is important when making this dish is to wait to put the tomatoes in. I only mix mine in with the other vegetables about two minutes before I mix in the cooked pasta. That way the tomatoes can heat through but stay plump and juicy.
