Whole Wheat Zucchini Bread

Reviewed: Nov. 8, 2009
Hands down, this is one of my favorite zucchini bread recipes that I have come across. I made a few slight changes to suit my taste: 2 cups ww flour and 1 cup ap flour, 1.5 tsp baking soda and powder to make up for the additional ww flour and .5 cup chocolate chips. It turned out moist and just sweet enough. This has become a family favorite of ours!!

Moist and tender cookie when baked for 9 minutes. Only change I made was to roll in cinnamon and sugar before baking. These cookies were a hit!

Mayonnaise Biscuits

Reviewed: Oct. 16, 2011
Easy, quick, and tasty biscuit! We added 1 tsp salt for flavor and next time I might try adding a little garlic powder and shredded cheese for something a little different!

Wonderful Waffles

Reviewed: Jan. 1, 2011
Fantastic recipe and well worth the time spent!! Waffles were crisp on the outside and light and fluffy on the inside. The only changes I made to the recipe were to replace butter and buttermilk with buttery spread and rice milk/vinegar mixture to make it dairy free. This is definitely a keeper!

Chocolate Chip Cheese Ball

Reviewed: Nov. 14, 2009
What an awesome cheese ball; it's much different from the usual savory ones I serve!! It was a little sweet for my taste, so next time I will cut back on the powdered sugar. I served it with graham crackers but I might try it with pretzels instead for a sweet and salty change.

Mom's Baked Beans II

Reviewed: Apr. 30, 2009
YUM!!! These are so great I won't ever go back to canned baked beans! They are definitely worth the effort. To make them extra special, I even add left over brisket or slow cooked beef. It adds even more flavor!

Cinnamon Raisin Bread II

Reviewed: Jan. 4, 2012
Followed the recipe as written except that I substituted 2c AP flour and 1c whole wheat flour for the 3c bread flour. The bread turned out pillow soft and subtly sweet. Next time I might bump up the cinnamon and raisins to really punch those flavors. I think I have definitely found my new go-to bread recipe!

Coconut Jerk Chicken

Reviewed: Feb. 23, 2011
This is a great recipe that allows for modifications depending on what's in the fridge. I substituted carrots for the squash and tomato sauce for diced tomatoes. I also doubled the jerk seasoning. It was a hit with my 3 year old and husband! Yum!

Old English Cream Pie Filling

Reviewed: Nov. 16, 2009
This is such an easy and tasty base recipe for pudding or pie filling. I made mine chocolate by adding cocoa powder, and I didn't even have to adjust the sugar. Once you try this one, you'll never go back to boxed mix. The only thing I will make sure and do next time is sift my dry ingredients, because there were little clumps of corn starch and cocoa throughout the pudding.

Smothered Beef Short Ribs

Reviewed: Dec. 22, 2009
I followed the recipe to the "T" and found it to be just yummy!! I always find short ribs to be very fatty so I skimmed off the fat as they were cooking on the stove and that helped with the greasiness. It left an amazing gravy after cooking for 3 hours. Paired with mashed potatoes and rolls finished off the meal!

Amish Macaroni Salad

This is a very flavorful macaroni salad recipe. I made it the night before a picnic ,and it was very creamy when it came time to eat. After one more day, it was even better after all the flavors "married." This is a keeper!

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Aug. 29, 2010
What a delicious meal!! We just prepared this for our family and parents, and everyone went back for seconds. The only change I would suggest is adding 2-3 cubed potatoes into the meat mixture--it really bulks it up and gives it some much needed starch. If I could give this 10 stars I would!!!
