Mom's Favorite Meatloaf

The family really enjoyed this recipe. I made slight modifications to suit our tastes: 1 additional egg, 4 slices of toasted whole wheat bread instead of saltines, 1 tsp garlic powder, 1 tsp salt, 1/2 tsp black pepper. It turned out great and everyone went back for seconds. Thanks for a great recipe!!

Kohlrabi and Apple Slaw

I really enjoyed this slaw; it was a nice refreshing complement to our meal now that it is so warm outside. The only change I made was to use lime juice instead of lemon juice, because that's what we had on hand. This will definitely be a go-to salad instead of the heaviness of macaroni and potato salads.

Wonderful Waffles

Fantastic recipe and well worth the time spent!! Waffles were crisp on the outside and light and fluffy on the inside. The only changes I made to the recipe were to replace butter and buttermilk with buttery spread and rice milk/vinegar mixture to make it dairy free. This is definitely a keeper!

Old English Cream Pie Filling

This is such an easy and tasty base recipe for pudding or pie filling. I made mine chocolate by adding cocoa powder, and I didn't even have to adjust the sugar. Once you try this one, you'll never go back to boxed mix. The only thing I will make sure and do next time is sift my dry ingredients, because there were little clumps of corn starch and cocoa throughout the pudding.

Easy Pickled Beets

Apple Crisp II

Not too bad, but I found even after cutting back the sugar to half cup, it was still too sweet for me. It definitely paired well with vanilla ice cream and that helped to mellow out the sweetness too!

Pretzel Crust

I followed the recipe exactly but found the crust to be a little dry and salty. It definitely has potential though. Next time I might try reduced sodium pretzels and a bit more butter. It was a great compliment to chocolate cream pie--nice contrast of sweet and salty!

Addictive Pumpkin Muffins

I wouldn't exactly call these addictive, but they are pretty good. My biggest complaint is that it is almost impossible to get the muffins out of the tins after baking if you use all applesauce and no oil. The next time I make them, I plan to try 50% oil and 50% applesauce. I also think the sugar could be scaled back to 2 cups, because they are very sweet otherwise

Thanksgiving Leftover Casserole

It was a little too bland for my taste to start off with, so I used milk and cream cheese instead of evaporated milk, chicken stock for water, added onion, parsley, rosemary and thyme and increased the cheese and pepper. The family loved it, so I will definitely make it again with the same changes.

Whole Wheat Zucchini Bread

Hands down, this is one of my favorite zucchini bread recipes that I have come across. I made a few slight changes to suit my taste: 2 cups ww flour and 1 cup ap flour, 1.5 tsp baking soda and powder to make up for the additional ww flour and .5 cup chocolate chips. It turned out moist and just sweet enough. This has become a family favorite of ours!!

YUM!!! These are so great I won't ever go back to canned baked beans! They are definitely worth the effort. To make them extra special, I even add left over brisket or slow cooked beef. It adds even more flavor!

Cinnamon Raisin Bread II

Followed the recipe as written except that I substituted 2c AP flour and 1c whole wheat flour for the 3c bread flour. The bread turned out pillow soft and subtly sweet. Next time I might bump up the cinnamon and raisins to really punch those flavors. I think I have definitely found my new go-to bread recipe!

Grandmother's Oatmeal Cookies

Amish Macaroni Salad

This is a very flavorful macaroni salad recipe. I made it the night before a picnic ,and it was very creamy when it came time to eat. After one more day, it was even better after all the flavors "married." This is a keeper!

Chicken and Mushroom Chowder

My family really enjoyed this meal, and I am already looking forward to making it again. The only changes I made were reducing the mushrooms to half pound, increasing the rice to 2 cups, adding half a bag of frozen peas and substituting almond milk for regular milk. It was creamy and delicious and reminded me of chicken pot pie without the crust!! The only change I would make next time would be to increase the carrots to 2 or 3. 1 just didn't seem like enough.
