Mexican-Style Fajitas

Great flavor on the skirt steak!! We only marinated the meat in beer and fresh lime juice and then seasoned it before putting it on the grill. It turned out so tasty! Cooking the vegetables separately, we realized we will need to season them as well, but overall, this was a fabulous way to make fajitas!!

Kohlrabi and Apple Slaw

I really enjoyed this slaw; it was a nice refreshing complement to our meal now that it is so warm outside. The only change I made was to use lime juice instead of lemon juice, because that's what we had on hand. This will definitely be a go-to salad instead of the heaviness of macaroni and potato salads.

Soft Sugar Cookies IV

Great basic sugar cookie recipe! Followed the recipe exactly and I found them to be just a little more crumbly than I was expecting. Overall, they were very soft and tender and I will certainly make them again

Fluffy Pancakes

These really were some of the fluffiest pancakes I have ever made. I had to make some changes due to dietary restrictions, but they still turned out delicious! I substituted coconut milk for milk and melted coconut oil for butter. This may have become my go-to recipe!

Light Cinnamon Coffee Cake

This turned out so delicious this morning!! I made a few changes based on our family size and dietary restrictions. I substituted coconut milk for milk, used egg instead of egg substitute, increased the whole wheat flour and decreased all purpose flour, used pecans instead of walnuts, and used coconut oil instead of margarine. I doubled the recipe and since I used a bundt pan, I had to increase baking time to 50 minutes. It was a huge hit with the whole family!! My two year old had two slices :-)

E-Z Drop Biscuits

Excellent basic drop biscuit recipe. I omitted the cream of tartar and they puffed up really big. I added 1/2 tsp of garlic powder and 1 cup of shredded cheese. They turned out so delicious and were a hit with the husband and my 4 and 2 year old boys!! **Update-due to dietary restrictions, I made these dairy-free with coconut oil and almond milk and they still turned out delicious!! This is definitely my go-to recipe!!!!!

Drip Beef Sandwiches

Great basic recipe, but even after cutting back the salt, I found it to be a bit too salty. I can't imagine what it would have been like if I had used it all. I also omitted the oregano based on personal preference.

Cinnamon Raisin Bread II

Followed the recipe as written except that I substituted 2c AP flour and 1c whole wheat flour for the 3c bread flour. The bread turned out pillow soft and subtly sweet. Next time I might bump up the cinnamon and raisins to really punch those flavors. I think I have definitely found my new go-to bread recipe!

Apple Crisp II

Not too bad, but I found even after cutting back the sugar to half cup, it was still too sweet for me. It definitely paired well with vanilla ice cream and that helped to mellow out the sweetness too!

Easy Pickled Beets

Coconut Jerk Chicken

This is a great recipe that allows for modifications depending on what's in the fridge. I substituted carrots for the squash and tomato sauce for diced tomatoes. I also doubled the jerk seasoning. It was a hit with my 3 year old and husband! Yum!

Grandmother's Oatmeal Cookies

Wonderful Waffles

Fantastic recipe and well worth the time spent!! Waffles were crisp on the outside and light and fluffy on the inside. The only changes I made to the recipe were to replace butter and buttermilk with buttery spread and rice milk/vinegar mixture to make it dairy free. This is definitely a keeper!

Pretzel Crust

I followed the recipe exactly but found the crust to be a little dry and salty. It definitely has potential though. Next time I might try reduced sodium pretzels and a bit more butter. It was a great compliment to chocolate cream pie--nice contrast of sweet and salty!
