Roasted Red Potato Salad

I have to say that I never would have thought to roast potatoes for a cold potato salad, but this is a winner. The only slight change I made, was to add part Greek yogurt and part mayo and I used the already cooked crumbled bacon. I just tossed the bacon pieces in with the hot potatoes on the cookie sheet so the flavors would meld. I am printing this recipe and keeping it handy. It is fabulous and such a nice change. Thanks

Breakfast Casserole

I just baked this and I am going to freeze for Christmas morning. I used oatmeal bread, crust on, 10 eggs and 3 1/2 cups of milk 1 1/2 cups of cheese. I put it in a large oblong casserole and one side I put crumbled breakfast sauage, diced peppers onions spinach & chopped baby bella muchrooms, the other side I omitted the crumbled sauage as my daughter is not a meat eater. It puffed up beautifully and I am sure it will reheat just fine and be enjoyed by 8 of us Christmnas morning. This was a breeze to make!

Chicken Piccata III

Awesome recipe. I added sun dried tomato strips and also capers. The tomatoes & capers just add more color to this great dish. Thanks for putting a new twist on an old favorite.

Maple Walnut Pumpkin Pie

Really awesome pie. The topping adds a great crunchy texture to the custard pie. I made my own plain pie crust instead of the graham cracker, as I felt there was so much "sweet" going on already that a plain crust just worked better for me. Will make over and over again

Simple Shrimp Pasta Salad

This reciope is a good basic start. I added 2T. capers, 1/4c celery, 1/4c onion,1 cup broccoli (lightly steamed) a handful of red and green chopped pepper two dashes of cayenne pepper, 1 tsp dijon mustard and lemon juice, toss it all together and shred cheddar cheese on top and toss again...it was great!
