Banana Muffins II

D E L I C I O U S!! They just came out of the oven, and I couldn't wait until morning to have one. I did like some others recommended and added some cinnamon & nutmeg. I was out of vanilla, so I used some almond extract. I also used 1C white flour and 1/2C whole wheat flour, and reduced the sugar to 1/2C. Then I added some fresh blueberries. So I guess I sort of made my own recipe, but this was a great springboard!

Simple Slow Cooker Meatloaf

This recipe is the best meatloaf recipe I've come across. I made a couple of changes based on other reviews. I used BBQ sauce instead of ketchup, only one egg, and I didn't have bread crumbs so I used oatmeal. I also made it into two smaller loaves to speed up the cooking time, and put it up on a bed of carrots and onions cut into large pieces after it was cooked through so it wouldn't sit in the juices and get too soggy. I can't say enough about how great this recipe is. Even my niece who is a pretty picky eater loved it!

Mexican Raviolis

This recipe is not the greatest I've tried. The meat mixture was WONDERFUL! I didn't have any chorizo, so I used ground beef and added a bunch of seasonings. Using the wonton wrappers was unappealing. They got slimy after being boiled, and they didn't stay sealed. I did not use them. I will definitely use the meat mixture again for something else, but NOT with wonton wrappers. I think they would be better pan-fried or deep-fried.

Creamy Au Gratin Potatoes

This was a great recipe, but I can never follow any recipe exactly without making my own additions. I chopped the onions and sauteed them in the butter with some fresh pressed garlic...garlic makes everything better! Then I made it the rest of the way like it says in the recipe. Everyone who ate them loved them!!
