Big Ed's Cajun Shrimp Soup

This was awesome. Very tasty, and more filling than I expected. I added a little more vegetable juice than called for, doubled the garlic, and spiced individual servings with Louisiana hot sauce.

Savory Corn Muffins

This was perfect- exactly what I was looking for. I added a little more buttermilk, and cooked it in a bread pan rather than cupcake pans.

Ratatouille

This was so awesome! I cooked it on low in a crockpot for about 6 hours, and added some thyme and ground peppercorns. Juicy, flavorful, and I even got my boyfriend to eat eggplant!

Gorgonzola and Apple Pork Chops

That was delicious! I served it with steamed, buttery asparagus on the side. A very hearty, rich meal. I did, however, cut the gorgonzola substantially.

Chicken Piccata with Artichoke Hearts

This came out really well- but I did reduce the amount of capers, and I used fresh oregano in the dredging mix (I put it in the food processor to make sure it was smooth). Next time I might try adding cream to the sauce, and sub lemon rind for the lemon juice. Even as is, this was very good, and it made a lot of food.

Tomatillo Salsa Verde

I modified this to make it into "salsamole". I used red onions, subbed some of the water with chicken broth, and added a diced Anaheim pepper to the simmering mix. Once it was liquefied in the blender, I added an avocado. It came out delicious!

Greek Burgers

Excellent taste, but the sauce came out thinner than is really convenient for a burger. I'd recommend cutting the yogurt by about a third. Other than that, these were amazing!

I followed the recipe exactly, except for the eggs (I forgot to get them started, and then just blew them off). This was REALLY delicious, but I might season the sauce a touch more next time, and possibly layer the cheese. This was a HUGE hit.

Home Style Macaroni and Cheese

The consistency came out nicely, but this was VERY bland. I'd suggest almost doubling the cheddar, doubling the dijon, and adding some garlic salt.
