I love cooking, and I love having friends and family over for holidays, so of course that is what I did for Easter.  My special project for the day was a Dutch apple pie for which I even rendered my own leaf lard for the crust.  It turned out beautifully, and I was so proud of all of the work… MORE

Zucchini Appetizer
As other reviewers have advised, I increased the baking mix to 1 1/2 cup and added two eggs. I used olive oil, a cup of cheese and 1/2 tsp cayenne. I baked it in a loaf pan for 55 minutes and after it cooled, I sliced it as thin as I could and served it with steak and salad. It was really very good, but I did make some changes from the original.

Slow Cooker Chili II
I made this for a casual dinner party. Used the recipe as written except I forgot to put in the green peppers. There were no leftovers and everyone said how good it was. It is also very easy to make and left me plenty of time with my guests instead of in the kitchen.

Sesame Pasta Chicken Salad
This was so good and so easy. My husband just loved it. I halved the recipe and it was enough for three meals for two people. It was even better after a night in the fridge. Make sure the pasta is cooked al dente so it won't get mushy in the dressing.
