Quinoa and Black Bean Chili

This recipe was delicious and filling - my husband and I both loved it! Made a couple of changes based on what I had available in my kitchen - I only had 1 can of black beans, so I added a can of kidney beans as well. Yellow pepper instead of red, and I didn't have zucchini, jalapeƱo, chipotle OR oregano so I added in one 4 oz can of green chilies and I felt like the flavor was good (especially since I prefer a less spicy chili). Also, had canned corn instead of frozen on hand. I feel like this is a fairly flexible recipe - using what I had it still turned out very yummy! Will definitely make again.

Maple Salmon

Oh my goodness! This is so delicious! I'm a big fan of simple dishes, and this was most certainly simple but resulted in an incredibly flavorful salmon! I did everything exactly as stated in the recipe and it turned out perfectly. Will definitely be making this again!

Teriyaki Pork Tenderloin

I'm not sure if I did something wrong, but I didn't find this recipe nearly as out-or-this-world amazing as most of the other reviews indicate. Don't get me wrong, it was definitely pretty yummy and tender/well cooked, but I think I was just expecting more flavor out of the marinade. I think I'll keep looking for a favorite pork tenderloin recipe...

Chicken with Garlic, Basil, and Parsley

I loved this recipe! I found it when my husband and I were on the first Phase of the South Beach Diet, and was excited to find a delicious-sounding recipe that fit the requirements. I made a couple of changes as per suggestions by others. I didn't add the red pepper flakes - mostly because I didn't have any on hand. Also, I used dry garlic flakes and found they worked just fine. Right before cooking, I poured some balsamic vinaigrette on top of the chicken/tomatoes, which I was delicious, and also I added feta cheese to the tops during the last 15 minutes of cooking. Wonderful recipe! Have already made it twice and will be considering it a staple!
