Butternut Squash Soup
What a great way to eat squash! I love soups in general, but frankly, this was one of the best soups I've ever made!! My 17 month old loved it which is pretty amazing since I served him cubed butternut squash the day before and he was spitting it out. As a modification, I cooked the squash in the microwave, only put in 1 tub (8 oz) of light cream cheese (I couldn't imagine putting in 2!), used canned chicken broth and pureed with a hand mixer right in the microwave bowl. Like others have mentionned, the only time consuming task was peeling and cubing the squash, but it is soooo worth it!
