Sesame Noodle Salad

I have made this several times and it is always a hit. Served either hot or cold, it is delicious. I added sliced chicken breasts to it once to make it a meal, but usually offer as a side or vegan dish for some of my friends who eat plant-based foods. If you use the right noodles, you can make it gluten-free as well. It is good in all cases and very versatile.

Blueberry Oatmeal

I thought it was good, but had a little less flavor than I was expecting considering all of the additions. The carb count was a little high for my liking especially with the brown sugar mixed in and yet it wasn't very sweet. I also doubled the amount of blueberries and could have put more in.

Garlic Kale Quinoa

Ingrid's Caesar Salad Dressing

After reading a few reviews, I used just a little bit less olive oil and half the blue cheese dressing, but kept everything else the same. It was amazing. I detected no hint of the blue cheese, it was all Caesar. I used Frank's Hot Sauce because I was out of Tabasco and left out the anchovy paste. The Worcestershire sauce gives enough of that flavor that we didn't miss it. I will never buy Caesar dressing again.

Garlic Croutons

Easy Shrimp Stir-Fry

Very tasty and easy. I used a full pound of raw shrimp instead of cooked for more flavor and followed the recipe exactly. I think using cooked shrimp would result in overcooked shrimp at the end. Unlike some of the comments, I could not taste the ketchup specifically at all and when I asked my husband what the sauce tasted like, he couldn't identify it either and was surprised when I told him.

Shrimp Red Thai Curry

Very good, but we made some modifications, and I did not think it was spicy at all as indicated in a couple of the reviews. We added bell pepper and snap pea pods to give it a little more variety in the flavor. I would add the pea pods sooner than the shrimp next time - they were cooked through, but still a little crunchy for my husband. We also made oriental noodles and stirred those in at the end, which helped soak up the sauce. I used lite coconut milk based on another review and it was the perfect consistency with far less calories. I would definitely make again.

Pork and Pepper Stir Fry

My husband made this tonight and we are already excited to eat the leftovers! He made a couple of modifications and additions, but generally stuck to the flavor profile which was wonderful. He used the marinade as the base for the stir fry so did not add any vegetable oil. It wasn't necessary and more healthy without. He used red curry paste in place of the hot chile paste and added some sliced carrots and celery to give it more vegetables. He also left the almonds out because neither of us are crazy about nuts in stir fry.

No-Cream Pasta Primavera

I followed the recipe with just an assortment of vegetables I knew my friends would like and it was perfect. I wanted a side dish for my husband's beer-can chicken and smoked ribs that would be filling, but not overpowering since his meat was the star of our party. This was a perfect side giving both fresh vegetables and pasta in one dish. You could easily add some chicken (or tofu if you want to keep it vegetarian) and have a one-pot meal.

Mexican Spaghetti Squash Stir Fry

I made this tonight and it was absolutely fantastic! I followed the recipe exactly except I did not have tomato sauce on hand. I used a 6 oz can of tomato paste to with 1 cup water and Italian seasonings and used all of it. I had a couple of moments of confusion - the "1 cube of chicken bullion" should read 1 cup of chicken broth as you need the liquid and could use actual broth or cube or granules to make broth. The other was that you really want to start the turkey mixture before the squash is ready or your squash will get cool. Excellent taste and very healthy.

Mediterranean Zucchini and Chickpea Salad

My husband made this last night with only a couple of substitutions - I don't care for chickpeas so he used great northern beans instead, roma tomatoes from our garden instead of grape tomatoes, and we didn't have white balsamic vinegar so he used a little regular balsamic and white vinegar combined. Delicious!!! We ate as a side dish with grilled chicken and it was a perfect meal. I brought some for lunch today and cannot wait to eat it.

Vegan Lentil, Kale, and Red Onion Pasta

I made this with a few adjustments: cut the pasta in half (I think you could leave it out completely), substituted ground pork for the vegan sausage and chicken broth for the vegetable broth, added tomatoes and mushrooms, and use dried instead of fresh herbs. Use extra liquid as the lentils will continue to soak it up. Delicious and heated up well for leftovers - my husband and I both loved it.

'Unstuffed' Cabbage with a Kick

I really liked the flavors in this recipe. I followed the recipe exactly and made brown rice on the side which cuts the spice down quite a bit. It was not too spicy once you added the rice and in fact, I might make it a little spicier next time.

Best Pork Chop Marinade

We just made these tonight and it was the best pork chop I have ever had! I followed the recipe except I didn't have any mesquite seasoning, so used a regular grill seasoning blend instead. I had four smaller cut chops so did not butterfly. We grilled them after marinading about 4-5 hours and they were perfect!

Suzanne's Spinach Quiche

I was asked to make a vegetarian quiche for a brunch and found this recipe. I made a couple quick alterations because of ingredients I had handy using 1/2 cup sour cream and 1/2 cup heavy cream in place of the yogurt. I used a small diced onion instead of the green onion and mushrooms. I wrapped the edges of the crust in tinfoil to prevent burning. It baked perfectly and was delicious!

Broiled Tilapia Parmesan

I enjoyed this, but we had thinner filets and I think the coating overpowered the fish a little. I would use a little less of the topping to fish next time, but would definitely make it again. We used light mayo and a little less butter to make it healthier and it was very good.

Creamy Spiced Coleslaw

I made this quickly one morning because I planned on having ribs for dinner that night and had some leftover cabbage to use. I didn't have celery seed or cider vinegar so used celery salt and red wine vinegar instead and it was delicious! Very quick and simple to make and so tasty. My husband loved it with the BBQ ribs - great combo.

Roasted Balsamic Cauliflower

I made this with whole garlic cloves (several) based on the other reviews and marinaded for about an hour. I think another Tbsp of olive oil would have been better. Delicious and easy! My husband said this is his new favorite way to eat cauliflower.
