Foolproof Rib Roast

Follow everything as stated and you will have a truly delicious rib roast. I had a 5 rib standing roast that weighed 12.5 lbs. The ONLY thing I did differently was to sliver a clove of fresh garlic and place the pieces in small slits I made in the meat. The recipe worked like a charm and was so awesome! Everyone raved!

Cheesecake Brownies

Delicious! Easy to make and a hit a our friend's house. As recommended, I poured 2/3 of the brownie batter in 1st, then cream cheese mix (I added 1 tsp. vanilla), topped with rest of brownie batter. For brownie mix, I used Ghirardelli Triple Chocolate..so rich and moist!

Sopapilla Cheesecake Pie

Wow...I read all the reviews and couldn't wait to make this..it was so easy and absolutely delicious!! I had just cut into it when when my 15 yr. old son came come from the movies with 3 friends. They smelled the cinnamon aroma and asked to try it. After one bite, all of them begged me to send this recipe to their moms to make! This will definitely be my new signature dish to bring to gatherings. :) p.s. I made no modifications as I believe a recipe should be made as listed to rate properly. Only thing I will do differently next time is use a little less sugar...maybe reduce it by 1/4 cup in filling.

Garlic Chicken

This was so delicious! I made made it with boneless, skinless chicken thighs and everyone loved it! So simple but oh so tasty! I added a tsp. of light butter to the warming olive oil and garlic and it was great.

Easy Garlic Broiled Chicken

I prefer to rate a recipe on the ACTUAL recipe, not what I added or substituted. I made this recipe as stated and we loved it! My only disgression was using slightly less garlic (2 tbs) and lite soy sauce. I didn't add any additional spices/sauces and it was absolutely delicious! The aroma was amazing as it cooked and the prep was so simple. I didn't need to go out and buy anything I didn't already have in my kitchen. I wanted something quick and easy for chicken thighs and was happy to find this recipe. I will use it next time I make boneless breasts and serve it with plain rice as I feel the sauce we go well over the rice. Thanks!

Rosemary Roasted Turkey

I made this rub with all dried ingredients but kept amounts the same as I was coatinga 20lb. turkey. I cooked it for about 2 hours breast side down and tented and then turned it and tented it it for another 2 hrs. Removed foil for last 45-55mins. Everyone LOVED the aroma, flavor, everything..it was easy and delicious!

Slow Cooked Corned Beef for Sandwiches

This is basically the way I cook my corned beef every year with the exception of the garlic. I did add that this year and it was terrific! I add two bottles of beer to my corned beef every year and I swear it makes the difference. Don't be afraid to try it. If you don't want the alcoholic content, I would suggest using O'Douls Amber. It is a non alcoholic beer and is darker and richer than the regular O'Douls but you'll still get some of that beer taste and tenderization.

There are so many wonderful reviews for the recipe that I would be only mimicking what most have said but this was delicious! I had been dying to try it and it was very simple. The ONLY change I made was to ADD more bacon because as one reviewer stated "you can never have too much bacon" :) We had it for two days with leftovers and my mother even made her leftover colcannon into potato pancakes for dinner the night after St. Patrick's Day and said it was even better! I did finely shred the cabbage to hide it from my kids and it worked! Thanks for posting!

Amazingly Easy Irish Soda Bread

I made this Irish Soda Bread to accompany my St. Patrick's Day dinner this year. This was also the first time I have made my own and let me tell you, I will NEVER buy another one at the grocery store again! This truly was amazingly easy! I followed everything as stated EXCEPT I did add about 1 cup of raisins (personal preference) and I did need more flour when kneading because dough was a tad to sticky to work with, but again, I have never done this before so I chalk that up to my inexperience in bread making. It was so sweet and delicious! An egg wash on the top midway through baking gave it a nice glaze on top and this bread was gone by the next day! (4 of us eating) This one is definitely a keeper!

Roast Sticky Chicken-Rotisserie Style

After reading through most of the reviews, I gave this recipe a try. This also was the CLOSEST I have ever stuck to recipe. In fact, the only thing I did was cut the salt to 3 tablespoons and omit the white pepper because as one reviewer said "who has white pepper"? lol..Anyway, this was so easy to do and I had my two (4lb) chickens seasoned and wrapped in about 15 mins. I refrigerated them for just under 5 hrs. and cooked them at temp stated for just over 4 hrs. That's when they hit the 170 mark. The aroma in the house was incredible and the taste was excellent! My son thought it was a tad too spicy so next time I'll reduce the cayenne a bit but everything else was great! It seemed like a perfect spice blend. I will also do this on a 6-8lb roaster instead of the smaller chickens next time just for ease and personal preference. Enjoy!

Apple Cider Sauce and Pork Loin Chops

I was determined to stick exactly to this recipe so I could give an honest review based on the actual recipe. Well, I failed..lol. Like so many others stated, I couldn't find frozen apple cider so I used a container of frozen apple juice concentate. I also didn't have poultry seasoning so I used 1/2 teaspoon each of sage, rosemary, thyme & marjoram. After baking the chops (15 mins. would've been plenty), I added the sherry and boiled away. The aroma of worcestershire was really strong so I added a 4oz. cup of unsweetened applesauce to the liquid. Also, like many others, I did use cornstarch to thicken the sauce. The end result? Absolutely delicious! Based on my own personal tweaks, it was 5 stars but without them, I feel the 4 stars is good. It's all a personal preference. One note- I made 10 smaller, boneless chops and had plenty of sauce.

Honey Ginger Carrots

I made these tonight to go to a pot luck dinner. I had to triple the recipe and everything was easy and was delicious! I did steam the carrots to save some time and I added 2 full teaspoons of ginger. The flavor was perfect and a nice change from regular glazed carrots.
