Glazed Ham with Peach-Ginger Sauce

the peach ginger sauce is so good. i am going to use this as a sauce for other dinners as well. if you have any problems finding hot cherry peppers, check out the 'italian' section of your supermarket. our supermarkets didn't have any whole peppers, but i found them sliced and marketed as 'hoagie spread' in the italian section. i had to go to a larger store that had plenty of selection to find it.

Lemon Coconut Cake

modifications made: instead of following the recipe for the cake, i just used a white cake box mix. i added lemon pudding to the cake. i also split the layers in two and added blackberry sauce in between. to find the recipe for the blackberry sauce, look up 'lemon cheesecake' which was submitted by 'rebekah'. the sixth review down (Linnsie) has a blackberry sauce recipe. it really adds something to the cake. give it a try. otherwise, i followed the recipe exactly for the filling and the frosting. i had enough of both, no need to double it. the filling is very good. i would recommend this to a friend.

Apple Cider Biscuits

Very easy recipe. However, mine turned out pretty dry. In hindsight, I wish I had added some milk. I'll try these again with a little more butter and some milk next time.

Grilled Ginger-Peanut Pork Tenderloin

this made a great tasting tenderloin - very tender and juicy. but, like the other reviewer, i could not taste the peanut butter, curry, or ginger. i marinated it overnight, and baked it in the oven rather than grilling.

Chinese Roast Chicken with Gravy

i have made this several times and have not been disappointed yet. my family loves it. i drizzle some of the sesame oil on it when i first put it in. also, i rub a mix of ginger, garlic powder, salt and pepper under the skin. great recipe.

Sour Cream and Horseradish Asparagus

i was so disappointed in this. i absolutely loved the sauce - before i put it on the asparagus and then broiled it. something happened to the consistency of it when it went in the oven. it looked terrible. i won't make this one again. i do, however, think that the sour cream/horseradish mixture would be great as a sauce on top of a burger or roast beef sandwich.

The Old Boy's Strawberry Pie

wow. this makes an excellent pie. i added a pinch of cinnamon and 1/2 cup of oatmeal to the topping. other than this, i followed the recipe exactly. the strawberries had just a hint of tart to them, the topping balanced it well. the way the berries cooked made an awesome filling. i will be making this again for guests at our cookout this weekend. yum!

Peanut Butter Fudge Cake

we really like this cake, but it's getting 3 stars because of how sweet and rich it is. this is a cake that you have to serve in small slices. also, the cake is good, but IMO not very moist. modifications made: only two. 1 - i didn't measure the peanut butter. i'm a PB lover, and i'm pretty sure that i stayed under the 1.5 cups called for in the recipe. 2 - i was looking for an icing that wasn't as thick as the picture presented, so i cut back on the confectioners sugar called for in the recipe. i only used 2 cups. IMO the (modified) icing is the best part of the cake, and i will probably use this (scaled back) recipe for other cakes/cupcakes. yum. oh, and i made this as a layer cake with PB in the middle, rather than the sheet cake.

Quick Black Forest Cake

what a beautiful cake, and so easy. the only modification i made to the recipe was to add the water and oil that the box called for the cake. i put the glaze on top and then cool whip and a few cherries. nice presentation, and guests really enjoyed it.

No Bake Cookies V

I have been making no bake cookies (aka preacher cookies to us southerners) for years. I've made them poorly and then I've made pretty good batches. Follow this recipe, but modify it slightly - 1/2 cup more oatmeal, 3/4 cup smooth PB, and a little less than 1/2 cup cocoa. Follow the advice of your fellow cooks here regarding the timing and you will have fugdy delicious cookies in no time.

Marinated Beef Sandwiches

Flavorful Southern Fried Chicken

Made this last night and it was the best fried chicken I've ever made. I made a couple of changes: I beat two eggs, dipped the chicken in the milk then the eggs then the coating. I then did the process all over again resulting in a double coat. I did not have poultry seasoning, so I left it out. Instead of onion powder, I used the dried minced onions I had on hand. My husband and sons loved it. Highly recommend!

As written, this is a great staple recipe. I've used this recipe many times now and have made small tweaks to make it a 5 star recipe. TIP: add a little more shortening to make them fluffier. Not too much, maybe a tablespoon. You can cut down on some of the butter if you don't like the idea of extra shortening and butter. Or you can only use shortening (4 tbs) and no butter. Don't soften the butter. It should be very cold. It will take a bit to cut it into the flour so that the lumps are pea-sized, but cold butter is better than softened. Don't let the recipe fool you about the dough being very wet. Don't go crazy with the milk. Also, for those who used milk instead of buttermilk and found the biscuits to be heavy - it's because of the baking soda. Substitute with baking powder and you'll find them lighter and better tasting.

Spicy Rapid Roast Chicken

very easy recipe. i had to throw something together with only a few hours notice and this really did the trick. i used a 6 lb chicken, but did not modify the amounts of the seasoning - i had still had ample seasoning. i seasoned under the skin. the only real modification i made was i also rubbed butter over the skin and put about a tablespoon or two in the cavity of the chicken. it smelled so good while it was roasting and it was so moist. my family loved it. so simple - thanks!

World's Best Potato Salad

i got good feedback from my guests about this dish. it was very creamy. but for me, something was missing. there was no zing. i would make this again for the creamy texture alone, but i would experiment to add some different flavor.

i love the glaze/sauce for this. i marinaded the loin in apple cider overnight and it made the meat so moist. as others have said, i also had to extend the cooking time.

SWIRLED™ Turtle Brownies

these were a hit at our new years day dinner. as a warning to you, the batter will be very thick. there is no pouring this stuff. but it turns out very fudgy. i could not find the swirled morsels, but my supermarket did have caramel baking pieces. i used those as a substitute along with regular chocolate chips. this is best served warm with vanilla ice cream.
